Delicious spring Quinoa salad with asparagus and eggs

Delicious and easy recipe for filling quinoa salad with wonderful dressing.
Quinoa salad is easy to make and you can vary as you like, in addition, quinoa is naturally gluten-free and at the same time a good source of protein. Quinoa tastes fantastic in salad and gives good satiety. Top with feta and eggs or make a completely vegetarian quinoa salad and serve for dinner or use the salad with quinoa in a packed lunch.
QUINOA SALAD
2 cups cooked red quinoa
1 small red onion
300 g cooked green asparagus
250 g cherry tomatoes
100 g fresh peas
2 boiled eggs
80 g feta cheese
50 g of cashew nuts
DRESSING
1 lemon
½ tsp honey
3 tbsp olive oil
1 tsp mayonnaise
Salt, pepper and garlic powder
Here's how you do it
Cook the quinoa according to package directions and drain well.
put cooked quinoa on a large plate.
Chop the vegetables and add in layers on top of the quinoa.
Add boiled eggs, feta cheese and cashews.
DRESSING
Squeeze the juice from the lemon and add the rest of the ingredients. Whisk well and then pour over the salad.
TIPS
Instead of fresh peas, you can also use frozen. Replace the 100 g of peas in the pod with ½ cup of frozen peas.
