Delicious Lemon-Raspberry Yule Log with Mirror Glaze
Remember to activate the translation of the language of your country. It is very simple :

Recipe for the Lemon-Raspberry Log consisting of a lemon cloud mousse, a raspberry insert, a soft raspberry biscuit and a yellow mirror glaze.
INGREDIENTS :
For the insert:
250g raspberries
3 tbsp sugar
50ml lemon juice
5g gelatin
For the cookie:
1 egg
2 tbsp sugar
2 tbsp cream or milk
60g flour
5g baking powder
For the lemon mousse:
2 eggs
60g of sugar
60ml lemon juice
50g butter
280 g full cream (30% fat)
6 g 150 bloom gelatin
the zest of a lemon
For the icing:
150g sugar
150g glucose
70g water
150g white chocolate
11 g 150 bloom gelatin
and yellow dye
