I always had a love-hate relationship with Cornmeal Pudding growing up. I really enjoy the soft custardy coconut top and the softer parts but closer to the bottom was always tough and I didnt really enjoy it as much. I use to just cut off the top and just have that....with this recipe I get a more rounded and even texture right throughout the entire cornmeal pudding, I use some delicious spices like star anise and cinnamon for an awesome taste and simplified the recipe as much as possible. Enjoy!

I have spring form pans. Most people don't so this recipe takes that into account

Thank you for sharing the recipe, brother. Just a question: is the almond extract for the liquid part mandatory? I don't like its smell and taste, so I would most probably omit it. Would this be okay?

It's optional. I just like it in REALLY SMALL amounts but you can skip it totally
