With its floral aroma and pleasant sweetness, elderflower jelly is perfect as a spread on bread, in desserts, or as a special ingredient in cocktails. In this recipe, I will show you step by step how to prepare elderflower jelly and provide helpful tips on what to watch out for and which ingredients you can substitute according to your preference.
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 (approximately 250 ml of jelly):
🥄 Elderflowers - 5-8 blossoms (about 15-30 g)
🥄 Juice (organic apple juice or organic orange juice) - 250 ml
🥄 Gelling sugar (2:1 ratio) - 180 g
🥄 Vanilla sugar - 1 tbsp
🥄 Organic lemon - 2 slices

🗒️ 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬:
✔️ (1) First, gather fresh elderflowers (approximately 10-15 blossoms). It's best to collect them on a sunny day.
✔️ (2) Choose blossoms that are fully bloomed and try to find ones without brown or dry leaves or any bugs.
✔️ (3) Lay the elderflowers flat on a table and let them sit uncovered for about 30 minutes to allow any bugs to crawl away.
✔️ (4) Remove the majority of the green stems from the flowers using scissors. Discard any brown or dry blossoms while removing the stems and place the beautiful flowers directly into a container (minimum 300 ml).
✔️ (5) Add 2 lemon slices to the flowers.
✔️ (6) In a saucepan, heat 250 ml of apple juice (or orange juice) together with 1 tbsp of vanilla sugar.
✔️ (7) Bring the mixture to a boil and let it simmer for 3 minutes.
✔️ (8) Pour the hot juice over the elderflowers and lemon slices in the jar.
✔️ (9) Allow the mixture to steep for at least 24 hours.
✔️ (10) Strain the contents of the jar through a cloth and squeeze out the liquid.
✔️ (11) Take the obtained juice (approximately 230 ml) and pour it into a saucepan. Add 180 g of gelling sugar.
✔️ (12) Boil the juice on high heat for about 3 minutes.
✔️ (13) Carefully pour the hot jelly into sterilized jars. Seal the jars immediately with the lids and let the jelly cool completely.
ℹ️ 𝐒𝐭𝐞𝐫𝐢𝐥𝐢𝐳𝐚𝐭𝐢𝐨𝐧 of Jars:
(1) Begin by thoroughly cleaning the jars. Rinse them with hot water and dish soap.
(2) After cleaning, you can either run the jars or bottles through the dishwasher (without detergent) at a high temperature.
(3) Alternatively, you can bring the jars or bottles, along with the loose lids, to a boil in a large pot of water and let them simmer for about 15 minutes. Make sure they are fully submerged in water.
(4) Once sterilized, carefully remove them from the water using tongs or sterile gloves and let them drain on a clean dish towel.
(5) Use the sterilized jars or bottles immediately while they are still hot to fill them with jam or syrup. Seal them tightly and ensure that the lid or closure is properly fitted to ensure a good seal.

▫️ As a filling for pastries: Use the jelly as a filling for cakes, pies, or pastries such as pancakes, crepes, or Berliner.
▫️ As a topping for desserts: You can use elderflower jelly as a topping for pudding, yogurt, ice cream, or even pancakes.
▫️ As a cheese accompaniment: Elderflower jelly pairs well with different types of cheese. Serve it as a side with a cheese board and enjoy the combination of sweet jelly and savory cheese. It particularly complements mild cream cheeses or mild goat cheese.

    Danke Lilly! Absolutely loved this recipe. I’ve not actually made this or harvested any elderflowers yet. I’m actually drinking last years batch of champagne which is more like a wine, due to being flat but it’s really nice. Superb video & editing. Keep up the great work. James
