The best comfort food is broccoli and cheese soup! This soup is really thick and creamy, with lots of fresh broccoli and wonderfully cheesy.
Ingredients:
- 50 g butter
- 1 tbsp of olive oil
- 1 medium onion
- 2 cloves of garlic
- 4 tbsp of all-purpose flour
- 800 ml milk
- 500 ml chicken stock
- 200 ml heavy cream
- a large head of broccoli
- 250 g Cheddar cheese
- 50 g Parmesan cheese
- salt & pepper
