David Chang Makes Chili Crunch Carbonara
Dave Chang is back in the kitchen cooking his Chili Crunch “Carbonara” recipe. This dish, while inspired by the elements of a traditional carbonara, reminds Dave of other dishes like Malaysian Chili Pan Mee or Korean Buldak. He loves showing how versatile our pantry products are through creative yet comforting recipes like this one. He brought this recipe to life with Momofuku Soy & Scallion Noodles, Momofuku Savory Seasoned Salt, and Momofuku Chili Crunch.
As always, there's no plan, no preparation but this is the essence of weeknight home cooking. Dave's not trying to hit the bulls-eye, just the target.

News Update: Chang has trademarked Carbonara as well.

He trade marked cooking pasta in water last week.
Support the smaller brands that makes the Chili crisp (A condiment that has been around for centuries in many forms) because David is going after their hard earned work, money, and history for his own!
Momofuku closed so fast in austin, they didn’t even have time to open. Food was beeeeeeyyyyyyoooooonnnnnd crap.
so you stole the chili crunch idea and now you are trying to sue other people?
I never heard of this until Chang decided to bully other making it. I will seek it out but an boycotting Momofuku
He'll next trademark ramen, pad Thai, nasi goreng, adobo, curry, tempura, fish n chips, kimchi. Then he'll trademark "bully-hole."
i am obsessed with your chili crunch and the savory salt... the stuff is magically delicious.

And now magically trademarked.
Holy smokes that looks amazing😍🤤
That looks simply amazing!
Genius as always.. takeaways to learn from
Looks amazing.
I say YES to adding chili crunch to carbonara! Thanks for the tip !
I'd make that!!!! Bravo!
Chilli pan mee is the BEST thing ever!
Love this channel now
The LA burger joint, "Umami Burger," filed a trademark on the word umami and started hitting restaurants nationwide with cease and desist letters. They even sued a family-owned restaurant in Texas called "Umami Mia." The judge ruled that culinary terms cannot be monopolized.
Taking the hot noodles directly from the pan to hand to mouth is a real pro chef move! 😂
That chili crunch and the soy sauce is amazing.

David! I dont think I could love this anymore. I cannot wait to make it. Thank you for your noods!
Yum!
We love your show My wife and I was watching the one about the origins of msg and dumplings and we wanted to know if you know anyone else experienced having to ask for bread a normal restaurant, as if we Asians don’t eat bread or something?? We were just curious if anyone else out there has this recurring situation , and we tip at least 20 percent usually , that’s not cool to have to ask almost every time ,
Is there a video of your wife's favorite dish too? I enjoyed this and subscribed.
So you're basically copying from a southeast asian recipe, and then suing Southeast Asians for using a generic name like chilli crunch. You're a real hypocrite, David. Disappointed fan here.

Those companies he’s going after can just re-label the products as “crunchy chili sauce” and be fine. “Crunch” happened to be a word that make significant sales difference from anything else branded as “chili sauce”
Yeah David Chang is very choosey about what cultural traditions he wants to trademark so he can bully smaller shops and restaurants out of business.
Britannica: When U.S. military personnel arrived in Italy in 1943 to battle the forces of Fascist Italy and Nazi Germany, they brought with them abundant stocks of powdered eggs and dehydrated bacon, goods that served as a currency of goodwill-and sometimes actual currency-in a starving nation. Combined with pasta, these ingredients became pasta carbonara, the name suggesting food that one might feed a hungry coal miner in need of ample sustenance before heading into the pit.
The noodles are actually pretty damn good.
What do you all do with all the leftover spice packets from the noodles?

You sound like you have no idea who David Chang is…
Can I get the chili crunch at Walmart or Aldi, or can I at least replace it with red pepper flakes ?
@HipHopMusics

You can also make it yourself its easy. Just heat oil in a pan until about 150 degrees Celsius, then pour it over your chili flakes in stages so it doesn't burn, let it cool. You have your chili oil now. You could also fry some other ingredients like garlic ginger shallots etc untill golden brown and take them out before pouring the hot oil on chili flakes for extra flavour

Better off making it yourself seeing as how it’s either David chang’s chili crunch or get sued.
Like Steve Jobs said when he introduced iTunes for PC. “Hell froze over.”
Dude is trying to go to war with all of Italy just by himself
Another Update: Momofuku has trademark SoySauce.
Looks amazing. I cook a mean carbonara, but damn. David knows how to add his own twist.
He added like $8 of chili crisp to the dish...
Happy that Dave made this after talking about it on the podcast so often. Got very disturbed by the display of Dave's Apple Watch showing a location constantly.
Fuck yeah let’s gooooooo
Add Japanese Mayo to the egg mix
Pecorino!
David trademarks pasta, noodle, asian, food, cuisine, and the whole dictionary
S Cease your condiment Bullying of others who produce their recipes that have been handed down with love through generations. There are far more important things in the world to worry about. Money is not the answer it's the problem.
I don't know...
that was so frickin much salt added, along with parm/chili crunch/pancetta... stroke on a plate lol. I get it, salt is important, esp. for restaurant dishes (and noodles!), but so many times eating fusion stuff (like some of the Roy Choi restaurants) or sometimes ramen, udon, etc. recently Jinya and Marugame, or some chitarra at a Cali/Italian spot near me, if I really focus on the taste, the salt level is just too high, whether that's the chef's intention or not. At least for my particular taste, and my blood pressure/water retention lol... and of course I could adjust my own to taste, if I were to attempt it at home.
So Dave, “how did you come up with this?” Dave, “I don’t know, I got all the shit in front of me!” So Dave, “are squirrel testicles normally found in carbonara?” Dave, “I don’t know what carbonara is, so fuck it, yeah they’re going the fuck in!” 😂😂
I've been adding chili oil to Italian pasta dishes for years at home 😂how is David only making this now.
I've never seen so many people butt hurt over a really simple noodle recipe. Whole bunch of Betas in the comments. Anyway, this looks delicious and I'm making it tonight.
This guy salts more than Ramsay
I would like to taste that chili for sure. But no way am I paying $150 for a dried noodle bundle to make carbonara. That's the absolute cheapest meal to make with noodles other than bone soup. That's the entire reason it was popular during WW2. It was easier to get pork belly, flour, eggs, and dry cheese to make a rich, filling meal. A good carbonara should cost $8 to make for five to six people. Why is it popular now to take traditionally cheapish items and just mark the price up. I can see the person eating these meals using their amazing Stanley stainless in some special $25 bowl.
I don’t fear climate crisis, World wars, nuclear bombs and aliens. I fear David Chang one day Will accidently slurp Down the entire Earth While he is eating noodles😮😮😮😮
Chilipeppers aren´t native to Italy so if Italians claim a dish with chilis in it as Italian it´s Italian fusion of South American origin. They should keep their mouths shut and just let people eat "their" food however they want to. Also can you please start shipping Momofuku products to Sweden/Europe please so i can buy them!

Lol. Relax
"I don't know the story of Carbonara". Then he proceeds to give you the history as it is known. 😆 The US troops were supplied eggs and bacon when they defended Italy against the Nazis. In most record accounts, this is how Carbonara was born, when the ingredients were mixed with noodles.
Yeah had to google what the hell the people is talking about , yeah , their ain’t no Trademarking in the Culinary world , it’s all open source ,
Sir, have you no shame?
It's not carbonara
I ordered all his gear on Amazon in one massive cart (but I prefer Jason’s XFF chili crisp way more). The SALTS were thrown into a BROWN PAPER ENVELOPE, full of BROKEN GLASS JARS!! 👀😖 I hope he effin READS this to know how AMAZON’s sloppily (& DANGEROUSLY) packing his shit! He’d be PISSSSDED! 😮💨😮💨
The amount of sodium this guy must eat is incredible. 4 huge pinches of savoury salt. They can’t possibly eat like that for every meal.
Love Dave Chang, but this video is way too long, well, it’s a plain carbonara with the chili crunch. Nice twist! And no, you never wanna overcook the pasta.
David Chang is a disgrace, shame on you
This is 6 minutes too long. Dave's third chin is less boring
Disgusting trademarks
