Cucumber kimchi (Oi-sobagi: 오이소박이)

Cucumber kimchi (oi-sobagi) is made by turning a cucumber into a pocket and stuffing it with vegetables and kimchi paste. It's delicious and refreshing and it's a great kimchi to make when cucumbers are in season and you don't feel like waiting for your kimchi to ferment. You can eat this right away: they're cool, spicy, and crunchy. Cucumber kimchi is a good example of a kimchi that doesn't have to be fermented to be great.
It's been a very popular recipe on my website ever since I first posted it. However my original video used copyright-protected music ('A Message to You, Rudy' by The Specials), and the sound was recently removed by the copyright holder. Many people have been asking me to remake the video, so with cucumbers in season it's a good time to do it. Enjoy the updated video!
Ingredients:
2 pounds kirby cucumbers (9 or 10 cucumbers) or 4 4½ inch long small, thin cucumbers.
2 tablespoons salt
1 cup buchu (Asian chives), chopped into ½ inch pieces
4 garlic cloves, minced
1 medium carrot, cut into thin matchsticks (about 1 cup)
1 cup onion, sliced thinly
½ cup hot pepper flakes
3 tablespoons fish sauce
1 tablespoon sugar
¼ cup water
1 tablespoon sesame seeds

    I bought big amount of cucumbers couple days ago and didn't know what to do before it's soggy. It was always in my mind to try this recipe after I tried your amazing traditional kimchi recipe. I tried it today and I'm speechless to describe how tasty is it! I lowered the quantity of hot pepper flakes but my tongue is still burning yet I can't stop myself eating it. Thanks Maangchi!!!

    ​@@riyamitawaHello, I'm very late for this reply but you can probably store this kimchi for like a month if you like fresh kimchi 😅 As long as you store it properly it won't go bad!

    This just made my night. As a child my best friend was Korean and her grandmother ALWAYS made these and we would devour them. I've never been able to remember the name and my description of them has always baffled people; but, the flavor and sight has always stuck with me. Soo tasty.

    I tend to make something similar but with regular kimchi paste. I stuff them and pour the leftover paste on top. Then slow ferment them in the refrigerator for a day. So delicious!

    This is still a staple in my snack rotation, I have made this since I watched this video when it came out. It’s a rainy day in Virginia today, so I made some cucumber kimchi to brighten my day. Thank you for all that you do! ❤

    I don't like Kimchi much but this cucumber kimchi is SO GOOD!!! :D It's like dill pickle but way better.

    I grew up in an African American and Jewish house with my korean aunt and the south korean diet is so much healthier and the people as well, I miss teh homemade korean foods.

    This is beautiful I didnt make the kimchi I bought chonga kimchi and stuffed it inside with red pepper garlic salt and pepper, honestly korean food is beautiful and amazing in every way and kind Seriously as an Englishman I am so happy to have discovered all these amazing flavours
