I've done the same thing with a pork loin. Roll cut it, slather it in mustard, give it cuban spices, layer ham, swiss and pickles on it, roll it back up, tie it and smoke it for 3-4 hours.

I've done bell pepper, jalapeños, mushrooms, and onions like that. But I'm going to give it the Ole Cuban shake down next go around. Sounds amazing

I was thinking of the Reuben. But it’s smoked, brined, brisket for the pastrami (sans smoked if just corned beef). Then ground up and mixed with kraut. Maybe with Russian/thousand island dressing, or use that for a dip. Then a rye bun? Or add caraway seeds to the sausage? I’d add a sharp Swiss cheese, like Emmental or Gruyère. If making everything fresh, it would take about 5, or more, days.

Shaved ribeye ground into sausage? Would need to be in a beef casing, because otherwise you're not gonna get that good Maillard reaction

@@B_L_Smith some people just like using words they don’t understand to sound like they know more than they do. I wonder if they know that a brown crust on bread is from the Maillard reaction? Imagine thinking that you can’t brown a sausage. Isn’t there even a “Maillard and Present” brand of sausage? Oh, wait those are Brown ‘N Serve so I guess there’s no reaction. 😝

Wooden cutting boards are a pain to maintain and keep clean, because whatever raw meat or poultry you slice on it, the wood absorbs all of that bacteria and gets so nasty. Also washing wooden boards can be difficult because of what happens when wood has too much moisture in it.

Go half & half with the cheese... Half swiss and half smoked provolone. You could even blend the two together first and pour it into a cheese mould, but i just alternate slices in a stack and then cut. I get the gooey cheese of the swiss but i also get the stronger flavor and wonderful cheese pull from the provolone

Just made these today I did a little bit smaller casings and a little bit longer for footlong cubano's. I also did my own pickles added crush red pepper And use the Leftovers of a spiral sliced ham. Tomorrow I'll make some buns!

For the cheese cubes, you could always use a potato chip maker (slice the cheese and then then put through chipe maker)
