Ingredients:
Marinade
1 1/2 kilos chicken wings, split into flats and drumettes
Salt and pepper, to taste
1 1/2 tbsp freshly grated ginger
1 tablespoon grated garlic
1/2 cup white cooking wine
1 1/2 cup tempura mix
1 teaspoon garlic powder
1 teaspoon onion powder
1 1/2 corn starch
1 tablespoon sugar
1/2 teaspoon curry powder
1/2 cup water
Vegetable oil, for frying
For the sauce:
1/4 cup gochujang (Korean red chili paste)
1 tablespoon soy sauce
1 1/2tablespoon sugar
4 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon sesame oil
Sesame seeds and chopped green onions for garnish
Instructions:
Prep the Chicken: Season the chicken wings with marinade mix. Marinate for at least 2 hours
Coating the Chicken: In a bowl, mix together the tempura mix garlic powder, and onion powder etc.. Dredge the seasoned chicken wings in the flour mixture, shaking off any excess.
Frying the Chicken: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the chicken wings in batches and fry for about 10-12 minutes or until golden brown and cooked through. Make sure not to overcrowd the fryer, as this can cause the temperature to drop and make the chicken greasy. To make it crispier double fry the chicken
Making the Sauce: While the chicken is frying, prepare the sauce. In a small saucepan, Add gochujang, sugar, soy sauce, ketchup, Worcestershire and water. Cook over low heat, stirring constantly, until the sauce is well combined and slightly thickened.
Coating the Wings: Once the chicken wings are cooked, transfer them to a large bowl. Pour the sauce over the hot wings and toss until evenly coated.
Garnish and Serve: Transfer the Korean fried chicken wings to a serving platter and garnish with sesame seeds and chopped green onions.
