"you're not supposed to put butter in Thai food, it's up to you, .. it's up to you..." Jean, you are a god among boys. I could sous chef for you in five seconds flat and you wouldn't have to say a damn thing. But that's not how it would happen:D I'm an Old as well, and some of the absolute best parts of life are cooking and shooting the stuff. Enthusiasm, when things get a little grey, is more than inspiring.

Finally made these. What an underrated video. These meatballs were surprisingly filling. I halfed the recipe, made 12. My wife was full after 2, I was full after 4 of em. That is without the sauce! Beautiful. Always fun making meatballs. Everyday is a holiday when you plan a special menu. God bless you, Chef. Hope your health is good.

Thanks for leaving the mistake in. I learn far more about cooking by watching you correct mistakes than seeing "perfection" all of the time. My attempts won't be perfect, so it's really helpful to have ideas already in mind so I can make corrections without stressing or making things worse.

24:03 Chef bro you really are doing Holy work by teaching this in such an accessible manner (other chefs from TV try to be badasses with the fire shooting up 3 feet from their pan). The quality of the food over the last 30-40 years is down down down, and fewer people know how to cook, are eating garbage from restaurants or store bought stuff that's loaded with salt, has little flavor, and is a gut bomb. People having consistent high quality delicious food in their life is the foundation of a happy people. Thank you

OMG! When I saw you put the breaded meatballs in the sauce I thought 'what the heck is he doing?' Then I though, well he's a chef he knows what he's doing here. Watch and learn! Then you come back and compare the two and confess your mistake. I laughed so hard. You are so entertaining I am always happy & inspired after watching your videos. I am so glad you don't edit out your mistakes. First it is so entertaining and I think for those who are learning to cook that this is the best way to let them know that as you say "Cooking isn't rocket science." It's just a way to have fun and cook for yourself & people you care about.

I finally found a use for my melon baller and ice cream scoop! Genius. Hands stay clean and not sticky with cold grease. Now breadcrumb dip is much easier. This is a GREAT tip, merci! This is a very nice recipe, unusual flavors, easy to make, healthy, low glycemic, cheap price of meat, and oh so great!! Merci Chef JP! I would use Kaffir Lime instead of regular lime, and Galangal instead of regular ginger, to get a more authentic Thai flavor. Use Chao Koh brand of Coconut Cream if you prefer a thicker sauce. Asian Supermarkets all carry them. Costco used to. Pas de beurre! Ah mon dieu!! C'est n'est pas du Thai Fusion Cuisine, cher Chef JP! I think if god wanted to punish you, he'd send you to a place with no butter. Ha ha ha!! How you love it.

We like to use Mae Ploy Red Curry Paste, never having seen or tried maesri brand, found it on amazon and have ordered it to give it a try, thanks you for the recommendation. We like to portion the chilli paste into small ice cubes in one of those silicon trays and freeze them and just grab as many cubes as we need, rather than repeated thawing and freezing the paste.take care, god bless one and all.

Chef, I love that you point out the mistakes you make and even laugh about them rather than edit them out of your videos because: A.) If you can laugh at yourself, you can laugh at anybody (that's a rule!) And B.) It shows that no matter how experienced you are in the kitchen, mistakes are going to happen, so adapt, adjust, and carry on with your sense of humor intact. You make cooking so approachable and explain the reasons behind the techniques, with a sense of joy that shines through the entire time. I love that you always say to season to taste and substitute ingredients you don't have on hand or leave out what you don't like. You're an excellent teacher and lots of fun to watch!

For some reason I have always tried to avoid ground chicken. I think I will try this. I love Thai food. I really enjoy your videos.

Chef Jean-Pierre you are indeed a treasure. Honesty is a rare commodity these days but you have never been anything but honest with us. I try to watch other cooking channels but many make me wish for a PlayBoy channel rewind. LOL God bless you sir.

I have watched chefs on TV and YT most of my life, and I must let you know that your show and techniques have taught me more in a month than they did in years. Thank you so much for sharing real knowledge. Also, personally I love seeing recipes from the 70’s, before I was born! It may not be popular, but an aspic would be amazing.
