My dad works at a chinese restaurant, an this is how its usually done here. The duck is roasted so that could be a good option if you want to try this recipe without such a large amount of fat(baste the duck). If you cant find chinese pancakes, they're made in a similar way to flour tortillas, but rolled slightly thinner. Another tip is to dilute the hoisin sauce, warm it with a bit of water and some sugar to get rid of that savoury bite. Love what you guys at sorted did with this dish! xx

that's a really interesting take on a classic dish! I love how simple it is (although, procuring that amount of duck fat might be slightly difficult coming from a health-concious family) Being Chinese, my favourite dish has to be whatever my mum decides to make, although at the top of the list has to be dumplings/potstickers. As for takeout, I'd go with sweet&sour chicken. There's just something about the sauce and crispiness of the chicken that is perfect with a nice bowl of rice!

There's actually two kinds of peking duck one has the kind of wrap used like in the video, but I prefer mine with the flat white steam buns. It is just a regional difference in how it is served. I think your version of peking duck is creative! And we do call those pancakes. Westerners tend to assume that pancakes only refer to the sweet cake like breakfast food, but in Asia we have savory pancakes made nothing like the western pancakes. You should try the Taiwanese green onion pancakes.

They try not to include the meat of the duck in the pancake, the star of the dish is actually the crispy skin =) After they carve the skin in front of us, the whole duck is taken back to the kitchen and prepared into another dish.
