Creme Caramel 🍮
Creme Caramel
Ingredients:
- 165g (3/4 cup) caster sugar
- 125ml (1/2 cup) water
- 5 eggs
- 1 tsp vanilla extract
- 60g (1/4 cup) caster sugar
- 300g (1 1/4 cups) thickened (or heavy) cream
- 400ml (1 2/3 cups) full fat milk
Method:
1. To make the caramel, combine 165g (3/4 cup) of sugar and water in a saucepan over medium-high heat. Once the sugar has dissolved, swirl the liquid in the pot but refrain from stirring with a spoon. If it starts to catch on the sides, use a wet pastry brush to brush away the burnt bits.
2. Cook until you achieve a dark golden colour, then pour the caramel into a 30cm metal tin (11.81 inches). Let it set hard at room temperature for one hour.
3. To make the custard, add 60g (1/4 cup) of sugar, vanilla extract, cream, and milk to a pot and place it over medium heat to dissolve the sugar. Heat the mixture without allowing it to boil.
4. In a separate bowl, whisk the eggs well. Once the milk is hot, slowly add it to the eggs while whisking continuously. Once all the milk and eggs are mixed together, pour the mixture back into the pot and heat over medium heat.
5. Stir the custard constantly until it starts to thicken, then pour it over the set caramel. Place the tin in an oven tray and carefully place it in an oven heated to 140°C (284°F). Pour water into the tray until it reaches halfway up the sides of the tin. Optionally, you can use a blow torch to remove any bubbles on the top.
6. Bake the creme caramel for 40 minutes, then remove it from the oven and let it cool to room temperature before refrigerating. Allow it to set for at least 3 hours, but preferably overnight.
7. To serve, turn the creme caramel out of the tin and cut a slice to enjoy!

May I recommend you place the mold on the rack, THEN pour it from the pot, instead of balancing it all the way there?😅

@DavidMiras gotta have a good camera angle. All that direct heat from the oven would be bad long-term for the camera. Plus, he gets to take the piss out of himself by adding the clip of the slow walk (he could have easily cut it)

I get this 💯…. I got to that point a couple of months back, then dropped the whole thing putting it into the oven 😢😢😢😢😢. 20 mins wasted making it - 40 minutes to clean up the mess! I’m still not over it

Amazing!!! In the Philippines we call it “Leche Flan”
Used to work at a Dept of VOCATIONAL REHABILITATION. A counselor there was from Spain. She made this and brought to work every couple of months. Loved it.
It's funny how we eat that around the world, but with different names. We have a version of that flan in Brazil made with bread or condensed milk! Plus we call it pudding 😂
TARGET LOCKED whenever I see this in a feast or any kind of occasion here in PH. We call it LECHE FLAN.

@@adrienhb8763flan and crème caramel are literally the same dessert and the only reason they’re called different things is because they’re French words and the French now use flan to refer to another dish. But in the majority of the world Flan is Crème Caramel. Stop saying wrong things for no reason lmao.

One of my favorite things about Andy is there aren't any horrible Tiktok edits like a lot of chefs put in their videos. Just knowledge, competence, and fantastic dishes. Never change!
In Puerto Rico we call it Flan. We also have other varieties of flavors also while keeping true to the ingredients of a traditional flan or crème caramel.

I don’t know if it’s a thing in all of Vietnam or just the place I usually go to, but I get my flan with crushed ice and coffee poured over it. It’s really good. I thought that was how everyone ate it but I’ve never seen anyone else do it like that on yt and stuff

That helps but you also need to cook it at really low temp so it doesn't boil and gets a bunch of bubbles inside.

A few differences here, like the use of whole eggs vs the yolks and milk vs condensed. Those and the cooking method definitely lead to differences in texture, but that they aren't that far removed (along with other similar dishes) always blows my mind

Why? I do enjoy this dessert 🍮 but it’s not Mexican at all? The word flan has French origins and is a typical dessert In Spain, France, Portugal, the successors of the Roman Empire

Here where I live we do it with sweetened condensed milk, milk and eggs. I particularly like the version with dulce de leche instead of the sweetened condensed milk.

That's not Leche Flan. Creme Caramel uses different ingredients. Leche flan is heavy on evaporated milk and condensed milk. Creme Caramel uses cream, milk and sugar.

@@EzekielDeLaCroixWell Leche Flan and Creme Caramel only difference is the sweetness and it is still called Leche Flan but its morely called Leche Flan de Crema now which is Creamy Leche Flan the only difference is more creamy and less jello like than what Leche Flan usually is.
