Just like Jaque Pepin''s. For added favour at the end add a bit crushed garlic to the pan to favour the juices and/or put some rosemary sprigs on the skin.

No, the purpose is to allow the air circulation in the fridge to dry the skin as much as possible.

what pan do I need for this?
After the first ten minutes the thighs released to much liquid. It evapotated after I continued cooking without the lid. I recommend using smaller thighs. Also, how long to cook after flipping it over?

10 minutes or until cooked through.
