Cozy Autumn to Winter Transition in English Countryside | Romanticizing November & Last Autumn Days

Cozy days between autumn and winter before I fully begin transition into Christmas and festive time. I feel like November is so under appreciated - but it's still very autumnal and beautiful outside. I'm enjoying cozy nights in and watching leaves fall from the trees in the forests. It's a truly beautiful, overlooked time of the year and I wanted to celebrate it in this video.

Pumpkin Loaf Recipe:
2 eggs
60ml plant milk (oat, almond or soy would work)
1 tbsp apple cider vinegar
(Instead of plant milk and vinegar you can simply use buttermilk)
75 oil (I used olive, but any oil would do, or melted butter as well)
150g brown sugar
420g pumpkin puree
2 tbsp maple syrup
1 tbsp vanilla extract
- In a small bowl combine plant milk and vinegar to create "buttermilk". Set aside while you whisk all other ingredients. In a big bowl whisk eggs until foamy, add brown sugar and oil, then whisk again. The mixture will become a bit thick. Then add "buttermilk", pumpkin puree, maple syrup and vanilla. Mix until well combined.
[ Buttermilk will help baking soda to do its magic and make the loaf rise ]
250g plain flour
1 tsp baking soda + 1/2 tsp baking powder
1/2 tsp salt
Spices:
2 tsp cinnamon, 1/2 tsp ground ginger (or fresh ginger finely grated), 1/4 tsp allspice, 1/2 tsp nutmeg
- Sift dry ingredients into wet ingredients. Combine gently with a spatula, making sure you mix well, but don't overmix.
- Bake for 45-55 mins at 170C/ 338F
- Let it cool down almost completely before cutting.
Optional: Maple Tahini glaze
Combine 2 tbsp of light good quality tahini with 2 tbsp of maple syrup + a pinch of salt. Mix well and pour over cooled down loaf.

    I refuse to accept festive mood until December! If it lasts for too long it won't be as special anymore. Each season needs recognition because there's beauty in all of them, just sometimes you have to look a bit harder and accept the not so great aspects of things.

    I am grateful for your vlogs. They resonate with me, though I live in Northern California in the Bay Area. We are experiencing low 40's Fareinheit at night and warm beautiful days. We may not have the colors of the east coast, and often November gets forgotten between Halloween and Christmas. I am reinventing this time of year because my family is reduced to just myself and my brother and he and his family live far away. So, I am learning to create the magic of gathering and giving thanks for each day, each moment that flows from one to the next. Thankfully I am retired now and I do not have the distraction of work and can devote time to creative pursuits, sharing good times with friends and leaving hope and love in my wake.     I live on a tropical island just above the equator. It's hot and humid in the summer months and hot and humid in the winter months. I can feel the longing for the three seasons I am missing. In my culture, we sing songs and read poetry flush with references to cozy autumns, crisp winters, and deliciously fragrant springs.     Thank you for yet another beautiful video! (Cake looks delicious but no such vegetables here) November where we live is the second month of our long Arctic winter, we have had snow since October. This year November has been very beautiful, cold days in the mountains here in the far up north (around -30C at it's coldest), Aurora Borealis dancing silently over the dark sky, magically beautiful sunrises and sunsets and a special soft stillness among the trees. We have only a few hours of daylight this time of year and soon the sun goes to sleep for a while and we enter the long polar night...a very special time when Mother Nature embraces all her children of the North with a quiet, peaceful darkness where one can think any thought and explore any feeling as one simply cannot get lost...So, yes, I really appreciate November...(And here no one puts up Advent& Christmas stuff until 1 Advent and then tree and such on the 24th)

    I adore Autumn! I look so forward to this season every single year. My birthday is in Autumn, in October. I love the stillness coming in, the message of slow down, take notice, get ready to retreat, hibernate and rest, but also LOOK AT ALL THESE BEAUTIFUL COLORS. I live in the South currently, and so miss the seasons changing, looking forward to the sweaters (I am a knitter and spinner, this is MY SEASON to use all the wool) and read, rest. Being that it gets dark early, it encourages me to slow down, that it is OK to rest and relax. I am doing my best to UNHURRY my life. Thank you for your videos! New sub here!

    I do love November! In the United States, we celebrate Thanksgiving and November and I usually stay very much in the autumn season until after Thanksgiving, then start transitioning to Christmas. Love your videos
