Cozy Autumn to Winter Transition in English Countryside | Romanticizing November & Last Autumn Days

Cozy days between autumn and winter before I fully begin transition into Christmas and festive time. I feel like November is so under appreciated - but it's still very autumnal and beautiful outside. I'm enjoying cozy nights in and watching leaves fall from the trees in the forests. It's a truly beautiful, overlooked time of the year and I wanted to celebrate it in this video.

Pumpkin Loaf Recipe:
2 eggs
60ml plant milk (oat, almond or soy would work)
1 tbsp apple cider vinegar
(Instead of plant milk and vinegar you can simply use buttermilk)
75 oil (I used olive, but any oil would do, or melted butter as well)
150g brown sugar
420g pumpkin puree
2 tbsp maple syrup
1 tbsp vanilla extract
- In a small bowl combine plant milk and vinegar to create "buttermilk". Set aside while you whisk all other ingredients. In a big bowl whisk eggs until foamy, add brown sugar and oil, then whisk again. The mixture will become a bit thick. Then add "buttermilk", pumpkin puree, maple syrup and vanilla. Mix until well combined.
[ Buttermilk will help baking soda to do its magic and make the loaf rise ]
250g plain flour
1 tsp baking soda + 1/2 tsp baking powder
1/2 tsp salt
Spices:
2 tsp cinnamon, 1/2 tsp ground ginger (or fresh ginger finely grated), 1/4 tsp allspice, 1/2 tsp nutmeg
- Sift dry ingredients into wet ingredients. Combine gently with a spatula, making sure you mix well, but don't overmix.
- Bake for 45-55 mins at 170C/ 338F
- Let it cool down almost completely before cutting.
Optional: Maple Tahini glaze
Combine 2 tbsp of light good quality tahini with 2 tbsp of maple syrup + a pinch of salt. Mix well and pour over cooled down loaf.

    I refuse to accept festive mood until December! If it lasts for too long it won't be as special anymore. Each season needs recognition because there's beauty in all of them, just sometimes you have to look a bit harder and accept the not so great aspects of things. Lovely video! Love the atmosphere!

    ​@@IamDariaWeirdly, even in the US, we have a lot of people and companies that rush toward Christmas and the New Year even as early as October. We have three holiday months in a row but it always feels like Halloween and Thanksgiving are overshadowed by Christmas. Also, by the time Christmas comes around I want every Christmas song on the radio to die. They are so annoying even by now, just after Thanksgiving.

    I feel like Thanksgiving and the autumn celebration is overlooked by Halloween and Christmas. The world is in such a rush, feeling this very deeply living in the US. We went north for Thanksgiving week and couldn’t wait to get home to our beautiful peaceful oasis in the mountainous woodlands of TN. The more I want to slow down the more things around me shift and change, from the music I surround myself with, the movies I watch to the tea and coffees I brew. Ever notice that slow living slows your heartbeat naturally? The health benefits of that alone make me want to immerse myself even deeper into this slow meaningful was of living. I do not want to rush anything because I will miss those tiny moments of magic. We as a society are always looking for the BIG in life, overlooking how precious and perfect even the tiniest of moments. You collect leaves, I collect tiny moments of joy and peace that I store in my heart so I can always bless those in my life and those I meet in a happenstance moment.     I am grateful for your vlogs. They resonate with me, though I live in Northern California in the Bay Area. We are experiencing low 40's Fareinheit at night and warm beautiful days. We may not have the colors of the east coast, and often November gets forgotten between Halloween and Christmas. I am reinventing this time of year because my family is reduced to just myself and my brother and he and his family live far away. So, I am learning to create the magic of gathering and giving thanks for each day, each moment that flows from one to the next. Thankfully I am retired now and I do not have the distraction of work and can devote time to creative pursuits, sharing good times with friends and leaving hope and love in my wake.     Thank you for yet another beautiful video! (Cake looks delicious but no such vegetables here) November where we live is the second month of our long Arctic winter, we have had snow since October. This year November has been very beautiful, cold days in the mountains here in the far up north (around -30C at it's coldest), Aurora Borealis dancing silently over the dark sky, magically beautiful sunrises and sunsets and a special soft stillness among the trees. We have only a few hours of daylight this time of year and soon the sun goes to sleep for a while and we enter the long polar night...a very special time when Mother Nature embraces all her children of the North with a quiet, peaceful darkness where one can think any thought and explore any feeling as one simply cannot get lost...So, yes, I really appreciate November...(And here no one puts up Advent& Christmas stuff until 1 Advent and then tree and such on the 24th)

    I live on a tropical island just above the equator. It's hot and humid in the summer months and hot and humid in the winter months. I can feel the longing for the three seasons I am missing. In my culture, we sing songs and read poetry flush with references to cozy autumns, crisp winters, and deliciously fragrant springs.     Are you enjoying England so far? The south doesn’t quite get as picturesque of autumn as some of the northern regions or midlands! Peak District and Lake District are certainly so beautiful right about now. But the weather is milder in the south, so I’m enjoying that too for now! 😊

    I do love November! In the United States, we celebrate Thanksgiving and November and I usually stay very much in the autumn season until after Thanksgiving, then start transitioning to Christmas. Love your videos

    As mentioned already, in the US, Thanksgiving gives us a reason to stay in Autumn-mode until late November, though that doesn't stop the stores from going full tilt Christmas at the beginning of the month. But where I live, in the southern US, the fall leaves don't even hit their peak until around Thanksgiving each year, and it can still be pretty hot at times in October, so I cling to fall throughout the whole month of November (and maybe even a little bit into December 😃).     Celebrating Thanksgiving today. The house is is still decorated with pumpkins, gourds and other Fall decor. I will not begin with Christmas until December. I see more and more Christmas decorations earlier each year. Some neighbors already have lights and trees up. I like to hang on to Fall as long as I can. Your pumpkin bread looks delicious!     I live in Southern California, near Palm Springs desert. For me, I highly anticipate this month when the temperature drops dramatically....highs in the 60's-lows in the 40's. I can finally pull out my autumn sweaters and drink warm tea and am able to now go outside and enjoy long walks. Besides, it's my birthday month as well🎉

    I do admire you taking off on your own to explore these beautiful places you film in your videos. We tend not to venture far in unpredictable weather and shorter days but look what we are missing. That must be the beautiful Wye valley that you are looking down on? The trees around here in the West Country have turned red and gold and look vibrant before the sun sets. It’s a wonderful time of year before the trees are stripped bare of their leaves and the hedges are trimmed right back.

    Beautiful video. Early in November I felt like I was in recovery mode from a lot of travel in September and October. I embraced coziness for a couple of weeks. But we celebrate Thanksgiving here in the U.S. (it was two days ago), and now I'm firmly in the holiday season. I didn't host, but I made a couple of side dishes and had company for several days. Now I will begin making and freezing Christmas cookies, decorating for Christmas, and embracing the holiday season. I have already been reading Christmas mysteries and fiction, as there is never enough time in December.

    I adore Autumn! I look so forward to this season every single year. My birthday is in Autumn, in October. I love the stillness coming in, the message of slow down, take notice, get ready to retreat, hibernate and rest, but also LOOK AT ALL THESE BEAUTIFUL COLORS. I live in the South currently, and so miss the seasons changing, looking forward to the sweaters (I am a knitter and spinner, this is MY SEASON to use all the wool) and read, rest. Being that it gets dark early, it encourages me to slow down, that it is OK to rest and relax. I am doing my best to UNHURRY my life. Thank you for your videos! New sub here!

    Beautiful video. Here in US, we celebrate Thanksgiving in late November which is so nice and for me, signals the waning days of Autumn….while many trees still hold onto their leaves, stick season in coming fast when all the trees wait to fill with snow.

    Usually once Thanksgiving passes in late November, then it's time to transition to Christmas for me. This year, though, I can feel the gloom of November and lack of sunlight hit me more than usual. So I tried listening to Christmas music earlier and found that I'd had enough of it after a couple of days. 😂 Hmm, enjoying the cold season without being festive is quite the feat. But I used to do it often, since I'm not fond of forced Christmas cheer. These days, I hope it can become authentic. If it's not authentic, I don't want it. :)

    I so look forward to and love your videos. We are so much alike❤. I love fall more than anything but welcome the coming of rest, slower days, coziness of winter. I do start my Christmas decorating now but our home is done in a very primitive style, almost like Christmas in the 1800’s with small simple trees, white lights, old ice skates, sleds, mittens and a few snowmen here and there. I only use candles, oil lamps and white Christmas lights during the winter and love to read, bake, relax and allow the chaos of commercialized Christmas to stay outside my door.

    When you mentioned substituting squash for pumpkin it reminded me of an interesting little fact. Libby’s canned pumpkin (which accounts for 80% of the canned pumpkin sold) is in fact Dickinson squash. Apparently pumpkin does not have a high enough sugar content. Libby’s has a canning plant near me here in central Illinois and in the fall you’ll see acres and acres of squash in the fields. Love your videos - so relaxing. ❤

    You are a woman after my own heart. November and half of December until the 21st, the winter solstice to me is still autumn, a time of contemplating, and inner work. Living alongside the rhythm of the seasons as they arrive in nature. Where I am in America we have Autumn colors straight through December.     Aah it must be so wonderful to have autumnal colours all the way through December! We still have a lot of golden trees here, but the winds have swept away a lot of leaves recently. By December they will all be gone! Living alongside the rhythm of seasons is the best way to live though. 🍂

    I have family that is lactose intolerant and they drink lactose free milk, but I never thought of creating the dairy free alternative buttermilk! Thank you for the amazing idea!     Dear Daria, thank you for the "forest bathing" sequences and everything else 😊. I never enjoyed November as much as I do this year since I found your channel. Before, "slow living" was more an expression for using public transportation system in and around Berlin to me 😉. But this November I took my Edith Holden book out of the shelf, made pumpkin cookies, took a nice walk in the forest and read a book from 1888.😊 Thank you for your inspiration❤

    Aah that sounds so wonderful! 🥰 Though honestly November was never a favourite of mine either, but as I’ve become more vigilant about observing seasons, I started noticing more of its beauty. Before, Octobers seemed so beautiful and autumnal to me, but this year we had 25 degrees and green trees for most of autumn, and only now everything suddenly became beautiful! 🍂 Haha I know what kind of “slow living” you’re talking about 😄

    November is that mouldy air that smells like familiarity, like home. It is my favorite month of the year. The browning of the atmosphere around engulfs me in a warm embrace as I walk down the memory lane about all that has happened this year while savoring some cake and reading all day.

    I can't say I was always a big fan of Novembers, but I'm starting to like it. I noticed that it's the most Autumnal month of the three to be honest, so I think November should be the new October! :)

    I agree! I also feel like the seasons shifted over the recent year and now Novembers are looking more autumnal than Octobers!

    Hi , I used to hate months of September, October and especially November, but recently I recognize their beauty, and started to enjoy that period of the year It was lost months in my life 😅 , in my countrybeautiful rainy days ( now its storming ) . Thank you of sharing that peacefull moments .

    Aah I understand the dislike for these months! Honestly when I was a student, I especially dreaded these months! 😅 But after moving to the countryside, something changed. These are still such beautiful months, and I’m more dreading January and February, when nature will remain still and unchanged for a while… We don’t get much snow, so there isn’t much to look forward to..

Those fairytale forest images, the candle light, the beautiful book browsing, the baking...     goodness i am at loss for words on what i really want to express in my gratitude for your talent shared in your videos to us all. you capture so much of how i see things in the autumn seasons as of course we will always have differences that remain due to the individuals that we all are. i love watching your content as i enjoy my self taught calligraphy sessions. together it is one of many enjoyable ways of therapy for my spirit soul and body. many have their go to for their own personal private time that is therapeutic for them and it is calligraphy, crocheting , knitting , and weaving.

    О милая Дарья, у нас уже не уютная атмосфера. Налетели ветра, мокрый снег и дождь сделали своё грязное дело. Листьев на деревьях не осталось, а те, которые упали уже совсем не жёлтые 😣😩.Мои уточки всё реже гуляют на улице. И всё это случилось буквально за неделю и поэтому я уже начинаю подключаться к всеобщей подготовке к Рождеству. И всё же этот ноябрь был прекрасен, пусть и не весь. Спасибо Вам за Ваше милое видео, которое я с нетерпением ждала, как и все предыдущие и как жду последующие ❤❤❤

    This was such a tough morning for me. My hubby is recovering from a long hospital stay. Now that he is home it s not easy emotionally for me to see him this way so I need all the peaceful vibes. It s not a medicine, but it surely soothes my heart. Thanks

    The last shot of you walking through the sunset fields...gorgeous! I choose not to participate in any festivities, so I cherish the quiet times alone outside during the day, and quiet nights doing whatever stirs my interest. Not everyone has this choice, or doesnt want to skip festivities and be alone, and I feel lucky I do. Im going to try your recipe as I have buttermilk in need of use 😂.

    I love this time of year. I simply cannot understand the relentless rush towards Christmas and then the rush to be finished with it before it's begun. I love Christmas but I do not decorate until the winter solstice and then the decorations come down on Twelfth Night. It's odd to me to see people putting up their Christmas decorations when it's not even Advent yet and then they take them all down on 2nd January! Each to their own but I prefer to enjoy each season in its own time.
