This Courgette Soup recipe (or Zucchini Soup recipe for our friends in the US) is absolutely ideal for those summer months when courgettes are taking over your veg patch! Add mint and ricotta for the special touch that is even popular with Jamie Oliver who also has a lovely recipe for Courgette and Mint Soup. It is the perfect courgette summer soup to make great use of the courgette glut and freezes well.

-- INGREDIENTS FOR 8 --
20ml vegetable or chicken stock
50g butter
100g shallots
800g courgettes
50g mint
100g ricotta
25ml olive oil
-- METHOD --
Melt the butter in a pan and sweat off the shallots until soft. Add the evenly chopped courgettes and gently saute for around 45 minutes until the liquid has completely reduced from the courgettes.
Add half of the mint leaves and enough chicken stock to cover. Simmer for a further 10 minutes.
Add the remaining mint leaves and blend until smooth. Season to taste.
To serve, top with cracked black pepper, the crumbled ricotta, mint leaves and a drizzle of good quality olive oil.
