I have worked in kitchens since I was about 12 years old and what I love about your channel is that you explain simple things as you go that will help beginning chefs so much. And you don't make a bit deal of it. Like when you suggested moving the potatoes to a bowl to avoid crowding the board. Those kinds of things are the difference between good cooks and great ones. Had a Spanish foreign exchange student who taught our family to make this many years ago. Become a family favorite. Kids especially love it because it is easy to make, and soooo yummy. They are all grownup now. Thanks for refreshing my memory.

The first morning in Spain before cellphones and the net, I was feeling guilty that my son would be eating tortilla for breakfast because I thought it would be like a Mexican tortilla, too spicy for a 10 month old. It was the only food I recognized when Modesta, the owners niece offered it, and better than him being hungry. When she brought it to our little table I was delighted and said, "This is like an omelette!" And so delicious! Especially with espresso! Later she graciously taught me how to make it, plate flip and all. As well as other wonderful and kind Spanish ladies that taught me other dishes but she was the first. I miss Spain, her people, all the flavors they gave to my senses and carry them all in my heart. Hope your viewers make the tortilla. It is much more than just eggs and potatoes and it must be cooked with olive oil! Any other oil will make it far less tasty. Thank you for sharing foods of Spain!

I love watching your videos because I can tell by your body and facial expressions that you are very passionate about your food! I was born and raised in the Philippines growing up eating spanish foods because both of my parents were part Spanish. My dad's great grandparents came from Madrid and Barcelona. Hace años una americana me dijo que la comida americana consistía en agregar cosas y más cosas a cualquier receta, más y más calorías y me ponía como ejemplo la diferencia entre una pizza italiana y una americana. La verdad es que leyendo muchos de los comentarios ello es una verdad innegables. Creo que para ellos es difícil de entender que no hay que complicar lo sencillo y que hay que respetar los sabores y no enmascararlos añadiéndole cosas o salsas. Siempre me ha llamado la atencion es la cantidad de salsas que hay en supermercados y restaurantes americanos Otra cosa que me llama la atención es que no entienden que la comida mexicana y la española son completamente diferentes, nuestras tortillas no tienen nada que ver con las tortillas mexicanas, en la comida española el picante es mínimo. Un tejano me dijo un día que nuestro picante es lo que ellos utilizan para darle sabor a los biberones de los bebés, jajajaja. Enhorabuena por este excelente canal

This is perfect road food. My mom always made a _tortilla de papas_ when we went to the drive-in or Disneyland. It's tasty, filling, super easy to make, and keeps well for an outing.

I'm so glad to have found your Channel . As soon as I saw this recipe I subscribed .My mother was from the village of Morón De La Frontera, she would make it for us and cut it into pie wedges and wrap them individually so we could take them to eat on the train. She would also put sliced black olives and a little chopped parsley. It's great as a meal or even just a little snack and keeps well.

You said it right. Nice way to make A omelette. But certainly not a spanishpotato omelette

My mum taught me this as a youngster (one of the first dishes i ever made by myself), she used to add thyme and cheese and never flipped it but finished it under a low to medium grill...beautiful 👏

Viva la raza y Spain! My grandma and ancestors were from Spain. I didn’t know what Mexican food was nor did I learn how to make it until I was in my 20’s. (I was born in the USA. I live here. Would love to visit Spain).Though grandma did learn how to make the flour tortillas, a tortilla was a different thing to a Spaniard. I didn't make this because I am staying away from potatoes for awhile. But I used this method and made it with shallots, olives, red bell pepper, garlic, spinach and ham. Delicious. I was nervous about the flip but following your directions it worked fine. Love this method. My husband and I are going soon on a fairly long plane ride so I figure I could make a couple of Spanish omelets, cut them into wedges, and we will have something to eat on our journey other than junk food. Thank you.
