Pasta alla Zozzona (filthy pasta) what a dish. A roman twist on its ancient recipe “The Carbonara”. With the addition of a couple of ingredients, makes this pasta special, rustic and filthy delicious. Must try it and share with your family and friends.
What you’ll need (serve 2)
300g Rigatoni (or any short pasta you like)
¼ cup diced guanciale
1-2 Tbsp olive oil (always extra virgin)
1 small or ½ large diced onion
1 sausage (I prefer casalinga, but feel free to use your favorite)
¼ cup white wine.
½ cup of passata
2 Egg yolks
½ cup of pecorino Romano-extra to top pasta

    If I am just one person and want to freeze it should I freeze part without the egg and do just one egg yolk instead of two?

    Yes you can just freeze half the sauce and do the one egg with half the cheese. When you reheat the sauce and toss the pasta. Thx for watching CWP
