    When I stayed in Japan for a year as an exchange student in high school I had a very adorable host mom. She had been widowed for a few years but lived together with her father, her sons and their cat Fuku(yama). She made fresh meals every day and living there for a while made me very happy. I learned to appreciate a lot more of the simple Japanese recipies. Your mom reminds me a lot of her in very positive ways.

    Sometimes I think you are stalking my real life. Last time I was organizing and decluttering my room and your popped in the same time up.     When she says "until the onion becomes transparent", it reminded me of this Spanish poet who said her grandmother wrote poetry in her recipes. Her grandmother wrote in the recipe: "First of all, you fry the onion until it loses all its pride". I wish I could cook the way your mother does. It looks delicious.

    One of my favourite episodes of Iron Chef was battle potato, chef Ken Chenichi vs Katsuyo Kobayashi, a well-known food writer, and publisher of many cookbooks in both Japanese and English. Although her expertise was home cooking, rather than Michelin star restaurants, the challenger DEFEATED the Iron Chef. The dish the judges like the most? NIKUJAGA!

    I loved the Sa Shi Su Se So rule! To think I was going to buy bonito flakes yesterday and didn’t. I usually make toasted sandwiches with them. Now I know how to make dashi stock! Thanks to your mum.

    I love your videos, and your mother's cooking! One alternative to making the soup base with bonito is "Hon Dashi". It is not too difficult to find in the USA. Just a tip for others who may want to shortcut the soup base part. Hon Dashi is basically, "bouillon for fish."

    Hi, Aki, thank you for sharing! So interesting and well explained! I love to travel around the world with recipes and hope, your mother will preserve her knowledge for all interested people. I’m not eating meat, so I hope there will be something with veggies as a base, too. But no worries, I can change everything for my habits. Our dear pottery makers from Denmark were very shy, too, so I could only show our ceramics at home and send all my interested friends over, no public relations… we love every piece of it and when something is broken, we put it together and use it as decoration. The world doesn’t need hoarding, but thoughtful ways of preparing and serving meals. Your meal looked like a painting 🖼! Looking forward to your extra channel.     When I was a child, there was a Japanese boarding school in my town (in a European country, for children of expats). That is when I first met Japanese cooking.
