    as far as the stock, couldn't you put the stock in an instant pot and it would be at a constant temp also? i dont like my instant pot because i can't get the stocky smell out of it. and i dont like my stainless steel container in the instant pot. i wanted to use a real stock pot. but i have this oven that has variable temp control and i want that stock at 180 degrees, firm~!!! could this device do that? whats the advantage over the instant pot for just the stock aspect?

    Look up Cantonese soup simmer soup and steam soup. The idea is to keep things gentle to extract more flavour and keep it clear.

    Hello, You could but with the Control Freak you can watch as your stock develops and make adjustments in time and temp as needed. Also the Control Freak gives you the ability to probe the stock and read the temp of the stock. Under probe control I cook my bone broth at 180. The probe control held the temp of the broth at 180f for 49 hours. The level of control you have is endless. Now we can create recipes with greater precision and better execution.

    @@CookingWithTheCajun I saw your unboxing of your unit and will be receiving mine this Friday and I will be making my own stocks with the same mindset of cook time as you just mentioned.
