On this cook, I smoked up some competition style ribs on my Pit Barrel Cooker. I also tried Kosmos Q rubs and the new OP X-1 bbq sauce. The Pit Barrel Cooker did an amazing job as usual. The OP X-1 Sauce was fantastic and definitely competition worthy.

Thanks Joe man it’s been a minute since I seen you use the PBC🛢 Ribs looked great🔥💯 I Have tried the dirty bird regular, got to try that pecan Kosmo has a bunch of great products and definitely need to get some of that sauce. I know you keep it 💯 and tell it like it is.👏

Hey bro! That thermometer really helps. The cook started at 250 to 275 but after I wrapped, the temp jumped to 300. I like to know what the temps are doing. Quick and simple mod.👍🏼kzread.info/dash/bejne/n4iNttOodcTLes4.html

Great looking ribs Joe! I like Kosmos products. I just picked up the Blues Hog Rasberry Chipotle sauce they just released. Plan on trying it in about 26 days when I get back home.

I usually put a even coat of each of the Kosmos seasoning's that I use at that time. It all blends in together.

So I assume any of the sweet rubs needs to have another type of salty rub for balance and not a stand alone rub?

nice job on these ribs Joe,and ive been able to convince a couple buddies of mine to quit making ribs in thier smokers and to strictly use the PBC,they seem to agree its made a difference in how thier ribs turned out,plus they can make a lot more in the PBC at once than they could thier smokers

Hello Christopher! I agree that ribs need to be cooked on the PBC. Have you ever used Fogo charcoal? It really leaves a good flavor on the ribs...really good flavor.👍🏼

Hello John. I use a Kutt knife sharpener and it works great. I'll see if I can find one and I'll leave the link here.
What thermometer did you install on the lid? Do you prefer the thermometer on the lid vs installed on the side of the smoker? Have been hesitant to drill into my PBC but also don’t like messing around with multiple probes. Thanks for you input.

Hello Gabe, I used a Manlaw simple guage. I found that adding the thermometer on the lid was going to give me the most accurate temperature reading. If you install a guage, make sure you drill a small pilot hole first. 👍🏼

Hello Adrian, I like tonuse binders. I think it helps adhere the seasoning to whatever it is you're smoking.👍

I was just curious. Do you get a lot of wild temperature swings out of your Pit Barrel? I do out of my Bronco Joe and it's really starting to annoy me to the point of getting rid of it. Thanks for sharing.

The PBC it steady on temps. The only thing I can think of it that it's windy/breezy where you have your smoker?

@@SmokinJoesPitBBQ- Yeah, but you would think with the intake and exhaust set up it has, it wouldn't be that much of a problem. It's not like it just blows into the drum, and i've tried to move it around to different locations to help with that, but i still get these circulative winds no matter where i put it. I've sealed it up everywhere too. You maybe right tho. i've had it for 4 years now. Thank you for the response.
Nice video. When I seen how muck of the Kosmos Rub you put on I was like oh thats going to be salty. But once I seen the sugar and honey I was hoping it would balance it out. I do have to say that Dirty Bird is salty. Because of the saltiness it works good as dry brine on chicken. So in your honest opinion, where does it rank with V lane?

I still think Victory Lane has more savory flavors and less salt. The Kosmos rubs are good but salty. Maybe if I use less. Now the sauces Kosmo has are all really good. 👍🏼
Beautifully done Joe. Ribs were perfect. I have used the dirty bird hot and the OPX 1 sauce and love them. I try to use my own blends to keep the cost down at home thought lol. Happy Thanksgiving to you and your family!

Great looking ribs! What brand of ribs? They look really thick. Also, you cooked these ribs a little longer on the PBC than you have before. Do you think this timing worked out better than your previous cooks of less than 2 hours? Thanks!

Hello Tom, I like to cook them at 2 hours on my Gateway drums. I can do 2 hours on the PBC too if I take both rods out. I really wanted the ribs to take on some of the Fogo flavor. This wa about 45 more than my norm and they were so good. This technique cooked around 260 to 275 most of the time. 👍🏼This timing was spot on.

Nice video, Kosmos Q rubs that you used just didn’t have any flavor to me. His brisket rub is really good. That BBQ sauce is pretty dang good. Does the victor lane rub have better flavor to you

Thruout the majority of ur videos u normally wld use ur butter bath mixture & u used slices of butter on this video & others ; but hav u used that squeezable butter??

Kosmos seasoning's doesn't take much just a lite even coat. Depending on the size of meat you are smoking/cooking
Your're spending too much time trimming the ends of the ribs. In a competition, you'll be slicing from the center part of the ribs.
why do you need to use wasteful, disposable gloves when cooking at home?

For several reasons. I wear a glove under my gloves to protect my hands from the heat. Also, I often have family & friends over and I like to be as sanitary as possible. Thanks for watching.
