Because some people don't identify with a particular gender, or how they feel changes over time (Genderfluid), and a neutral pronoun is more comfortable for them. Assuming you're a guy, you probably wouldn't be comfortable with people calling you she/her all the time. Some people aren't comfortable with He or She, or just prefer them to either. Simple as that.

It’s not improper speech to use they when referring to a singular person- you can google it. Like, if you said something like, I invited someone else on the vacation- you know them really well. You can use it when the gender is unknown or unspecified.
