Cold Fried, Cypriot SİLKME Potatoes 🥔 Crunchy Outside Creamy Inside 😋 How to Make Fried Whole 🥔

We do so much with potatoes… We have them fried, mashed, roasted with köfte, boiled, in a salad or as gratin. Today I want to share a family recipe with you, which is silky inside, crispy outside, cold fried potatoes. Furthermore, it is springtime and almost all the vegetables started to sprout so I want to share with you some storing and growing tips for potatoes to reduce the enormous waste of this beautiful vegetable.

Difficulty: Easy
Servings: 4-6
Prep time: 3 minutes
Cooking time: 30-45 minutes
7 potatoes, peeled and halved (dry ones are better because of the high starch content, but whatever you have is fine.)
1,5-2 L frying oil (sunflower seed oil or any seed oil would do great)
Salt, to taste
Hot Sauce
1 red hot chili pepper, roughly chopped
3 cloves of garlic, peeled
80 ml water (1/3 cup)
1/2 teaspoon salt
1 teaspoon sugar
2 teaspoons white wine vinegar (1 teaspoon if using a stronger vinegar)
4 tablespoons mayonnaise
Coriander Salad
A bunch of coriander, chopped
1/2 onion, sliced as semicircles
3 small tomatoes, diced
2 pinches of salt
1/2 lemon’s juice
1/2 teaspoon white wine vinegar
4 tablespoons olive oil
A handful of green olives, stone in
• Halve the large potatoes lengthwise and the medium ones crosswise then prick them with a small knife.
• Heat the oil in a deep pot to 110-120 C (230- 250 F) and check the temperature with a thermometer.
• Turn the heat on higher and add in the potatoes. Turning the heat on will keep the frying oil around 120 C (250 F).
• After adding the potatoes-because they are at room temperature- oil will cooldown to around 110 C (230 F). If you don’t have a thermometer, potatoes should look like as if they are slowly simmering in water, and not like deep frying.
• Carefully, transfer the pot on a small burner and slowly fry the potatoes around 100-110 C (212- 230 F) until fork tender- Poke the potatoes with a fork and lift slowly. Your fork should easily slide through the potato-. This will take around 25-30 minutes depending on the size of your potatoes. Don’t rush at this step to fully cook the potatoes.
• After potatoes are fully cooked turn the heat on to medium-low and fry the potatoes until crispy and golden-brown.
• Transfer them on a sieve to drain excess oil. Generously salt and mix it well.
• Your silky soft inside and crispy outside potatoes are ready! Eat your insanely delicious potatoes while they are hot and enjoy with coriander salad, hot sauce and of course with your loved ones!
• To make the hot sauce, add the chili pepper, garlic, water, salt, sugar, vinegar in a small saucepan and bring to a boil. Put the lid on and simmer 10-15 minutes. Transfer the mixture in a small bowl and puree with an immersion blender- or pulse in a food processor-. Leaving some chunks will give an extra texture to your sauce. Mix with the mayonnaise and your hot sauce is ready
• To make the coriander salad, rub the onion slices with a pinch of salt to soften the edgy taste. Add in a bowl with the coriander, tomatoes, salt, lemon juice, olive oil, vinegar and olives -which is an essential for a Cypriot salad-. Give it a good mix with your hands and your mouth-watering salad is ready as well.
Bonus tips:
• Don’t store your potatoes in the refrigerator. Refrigerator causes acrylamide level of the potatoes to increase and the potatoes get darkened. If the browning grows towards the inside of potatoes and they can even become carcinogen.
• Store them in a dark and cool place. Light and heat can quicken sprouting.
• Deeply cut off the sprouted parts of potatoes. You can plant sprouted parts to grow your own potatoes.
• Cut off the green parts of your potatoes, if there are any. Don’t eat them if your potatoes are getting purple.
• Try to use your potatoes without peeling. Peel is the most delicious part and you wouldn’t want to waste it. Rub potatoes with a loofah or use a brush just for vegetables to clean them.
• If you are making a recipe which requires peeled potatoes, always peel them with a peeler to minimize the waste.
• You can use peels as compost or make potato peel chips with them.
• Mix potato peels with olive oil on a paper lined baking tray and bake them at 200 C (390 F) for 10-12 minutes until crispy. Take them out and mix with salt or spices.

    I stumbled upon your channel by accident (thank you KZread algorithm) and from the very first video I felt as if I was watching a member of my own family cooking. My grandmother was Pontic Greek from the area of Samsun, her greatest love and pride besides her family was her cooking. She bestowed her knowledge to her daughter, my aunt (to whom you look a lot alike when she was younger) and her passion of cooking to me. I've found a lot of her recipes in your videos, with a few differences here and there but the essence of them is the same. And then I watched this video and I could "smell" the potatoes, because that's exactly how she would cook them! Thank you so much for reminding me of some amazing recipes, teaching me some new ones and introducing the amazing flavours of our sister cultures to the world!

    Here in Mexico we eat the potato’s skin as well. The recipe is as follows: In a pan you put some vegetable oil, then put a like a quarter of a chopped onion and sauté; then you put the potato’s skin and again sauté and finally you put a few leaves of epazote, just for the taste, add a pinch of salt and that’s it! and you could eat it as a side dish or snack with tortillas :3. Well, take a good care!

    My god! My mother makes these, she must have learned them from her grandmother who was born in Istanbul! We usually make small potatoes like that so we don't cut them at all!     This is the exact method my mum and immediate family cook their spuds. I've eaten a lot of spuds in my time but this method, is for me anyway, far superior to other methods. Keep up the good work.

    I have three compost bins and I made them by myself using bamboo growing nearby. My banana trees love it and are growing so well. I use potato skins, veggies bits and pieces as food for my olive trees, bananas and the tomato garden since all of these plants love acidic soil.

    Potato 😜gas. Interesting. I didn't know how to best store potatoes. If you want to teach more about storing fresh fruits and vegetables I certainly would enjoy that. Turkish, Cypriot cooking is new for me. The technique is so clever. I've been a home cook for 55 years. I started cooking when I was 12. My mother was so very sick with cancer..so I made the four course Thanksgiving Day dinner from scratch. You're so enjoyable and interesting. You have a sweet face and sincere disposition and you're a good teacher. The depression you passed gave you a deeper sense and understanding. No one asked but I gave my opinions. Sorry. Thanks for all that you do in sharing of yourself and knowledge of cooking. I look forward to your next video.

    PERFECT SCENAIO...5:30am... make a delicious cup of organic coffee from Peru (freshly ground)... get comfortable in the 'guest' chair in my office that has a full wall of windows in the sunroom - turn on some ambiance with 1 violet light on, pink Himalayan salt lamp on, and another small light on... still dark outside - turn on REFIKA;S KITCHEN! Can't think of a better way to start my day! All those SMILING faces looking back at Me from afar! (: This recipe looks so good!! Even though it is deep-fried (not something I do much of anymore), I MUST try this. It just looks too good to pass up.     People inTaiwan eat sweet potato/yam more than potato. Do you think this cold fry method can also apply to potato’s cousin? I love to watch your cooking/teaching, it’s full of great heart, simply sparkling! Have been in your city eight years ago, after virus retired, I will visit your beautiful country again, and, of course, eat more Turkish food. At meantime, I watch your program and your family with delightful admiration.

    Refika I love that plate. We have a version of this in India. It is a popular street food called "aaloo chaat" Vendors slow fry cubed potatoes till they reach this unbelievable texture that you hit in your video. It is then topped with creamy thick whipped yoghurt (seasoned with black salt and sugar), jaggery+dates+tamarind chutney - for the sweet sensational tang essential for any "chaat," dollops of green chutney made with green chilli, ginger-garlic and fresh coriander , slivers of onions, dash of lime and finally a generous sprinkle of salty-sour chaat masala( spice blend of pepper, cumin, black salt, pomegranate seeds), roasted cumin powder and red chilli powder on top for the crowning glory. On the streets it is served in "donay" small bowls made from leaves and twigs and a wooden icecream spoon that is funnily ill equipped to scoop the yoghurt 😄

    I feel like such an ignorant person because the only thing I know about Turkey is that I know NOTHING about Turkey. Your city is beautiful and the food is so intriguing. I stumbled across you guys and I’m so grateful I did.     I just found your channel and I'm binge watching like a crazy person. I've never had any of the recipes I've seen so far and I'm pretty excited about trying Turkish food.
