What I love about this channel is that I feel like I'm together in the kitchen with Chef. I love cooking. Today, I made an amazing (to quote Chef) beef barley soup, but here I am cooking (virtually) again--without the need to do all the chopping and cleaning that I just did. Thanks for letting us cook, even when we really aren't.

Exactly. People used to laugh at me because when I was describing and giving ingredients to a dish I made, they would tell me that I was already full because I eat as I’m describing it. That’s when I paid attention to it and realized that they were right.
I’ll be diving in to this on my ‘91 today. I was thinking it was a mechanical problem with the actual door, but I’m seeing these exact symptoms. Really hoping for success. Gem of a video either way.

Chef has learned a new measurement. “Healthy tablespoon” is perfect. I can’t watch his videos without multiple “grins” on my part. That is what makes this guy my favorite.
There is NO other chef like Chef JP. Nobody comes close . Other "chefs" are there just for the cash. Chef JP does it out of love and passion. Chef JP can make a peanut butter sandwich and it'll be fun 😀. Compliments to Jack also. A really great team.

Thank you Chef and Jack. The two main recipes I search for on the internet are coleslaw dressing and shortbreads. Maybe as we head into summer of 2024 you could do an Asian coleslaw dressing? As we hit November this coming week I will put in a second request for authentic (or not) panned shortbread recipe. I really try to get most of my Christmas baking (fudge, cookies, squares) made in November.

Have you ever made a recipe you ended up not liking, then turned around and remade it your way? That would be an interesting video. I love your recipes, but I think it's your passion for food that brings me back. ❤
My parents laughed when they first encountered coleslaw in New York City. "Coleslaw" is an early New York, English butchering of the New Amsterdam "Kool Sla", which is Dutch for cabbage salad. In Dutch the double "o" combination is pronounced like an "o" with a silent "e" in English. So "coleslaw" is what they thought they heard as the name the Dutch used.
He cracks me up. Brilliant!
I usually soak my cabbage in salty water for 30 minutes to breakdown the stiffness of the cabbage. Yes dressing goes in early to make everything gel beautifully. I do rinse the cabbage well after soaking it.

I agree, I use German method of adding salt to the cabbage and "scrunching" till is softer. It does need to be well washed then to get the salt out.
Ring the bell then watch!! Never disappointed
Looks delicious. I dont care for Cole slaw, but I'll use it on a wedge salad tonight

This looks like a much better vinegarette than i one ive made, i need to try it. I appreciate your explaining the reasons for ingredients, it helps so much for decision making in every meal i cook

Remember, you need an acid, an oil, and an emulsifier. The garlic works as an emulsifier just like eggs do in mayo. Garlic emulsified sauces are called aioli. But eggs make mayo. I think you can use other emulsifiers in other stuff like cheese sauces. If you are eating fast, you can just use mechanical emulsifier by shaking vigorously, say for salads. But it separates quickly. Last second stuff.

Chef Jean Pierre: when I make mayonnaise I use bacon grease instead of an other oil. I put in garlic chopped (1 segment), and your vinaigrette other ingredients (salt and pepper), hot sauce just a few drips, mix it all together, and it is good, you might try warmed bacon grease in your vinaigrette so the bacon grease is liquid instead of olive oil. I use a single serving food processor with the flat side of the blade leading into the mixture.

I've been waiting for this video ever since you came out with the creamy version. Thank you Chef 🫂🤜 Edit: i have to thank you for how you make your videos. Ive learned more about cooking and WHY you do things, like onions first(except for bacon), how to cook the mushrooms, the garlic until you smell them. The stocks, omg the stocks, ive kind of become obsessed with them lol. I owe you a lot. I dont know many chefs if any actually explain why they do things in a certain order or why. You've not only brought passion into my cooking but joy. I cannot that you enough for what youve done for myself and my family

I was at a sports bar yesterday with friends and my son. The food is amazingly good for a sports bar. My son ordered a BLT and side of coleslaw-I tasted it😳. Awful mayo based and way too much dressing. I thought this needs a good vinegar dressing instead! Now, I see this! I’ll make this next time he’s in town! Thank you, Chef!

Mamma Mia Chef, you think you forget things, I forgot the scallions, didn’t put in the cranberries. I also tried to cut corners by getting a bag of already chopped green and red cabbage and carrots from Trader Joe’s. I got purple slaw! Next time I go from scratch. I’m definitely going to make this. I will be adding wasabi to the dressing. For some reason, it just umphs the flavor of dish. It is a good substitute for the Dijon mustard. My daughter can’t eat things that have it. She says it gives her a major headache. She does like the wasabi as a substitute.
