Hello Folks!
I hope I find you all well. So today I made a batch of these lovely potato croquettes :) We have these quite often as a side to a meal…but there’re actually really tasty on their own as a snack! I’m doing these in the air fryer, but you could deep fry them if you prefer - I would use sunflower or vegetable oil for that.

INGREDIENTS
650g | 23 oz Potatoes - I used Maris Piper potatoes
1 & 1/2 Teaspoon garlic granules
1 & 1/2 Teaspoon salt
1/2 Teaspoon pepper
3 Tablespoons cornflour/cornstarch
80g | 2.8 oz Plain/all purpose flour
3 Egg whites
180g | 6.3 oz Dried breadcrumbs
3 Tablespoons parmesan

If you don’t mind, how is it different using egg whites instead or regular eggs for the croquettes? Just curious x ^_^

Not much of a difference Doug 🙂 Using the whole egg makes the batter (breading) a bit thicker and tougher@@DougTrovinger
Hi Cheryl. I was born and raised in the southern part of the U.S. Our family always called these potato pancakes. We made them out of cold leftover mashed potatoes and added onion for extra flavor. They've always been a favorite of mine. I am going to try your recipe as they look great. Thanks for another great video.
Family favourite at Xmas and New Year. Deep fried back in the the day.

They look very professional cheryl. Much nicer than shop bought ones & tastier too. Definitely going to givd these a go. Bet they are really good deep fried, depebding on how much mess i wanted to make in the kitchen would depend on how i cook them!! I do use my air fryer a lot but some things are just better deep fried arent they
I've had them in an Italian restaurant with a bowl of ragu for dipping

Oooo, yum. These would probably freeze well, wouldn't they? I have a bunch of potatoes from the garden that are a little beat up and must be cooked or discarded. This looks like a wonderful way to use up a bunch. Thanks for the great video, Cheryl.

Hi Cheryl, an idea I got from chef Harpal Singh Sokhi (on here) is, that one can substitute breadcrumbs with crushed corn flakes. (What a great idea!) My latest project: I'm foraging mushrooms to dry them. And then grind them to a powder (each species seperately), to use it as a spice in sauces, soups, etc. Greetings from the far north of Germany!

Do you have the mushroom called, in English, Chicken of the Woods? Grows on the north side of dead oak trees. And when cooked, it has the taste and texture of chicken.

@@Demun1649 Yes, we do! It's named Schwefelporling here, and it only grows once a year,either in spring or in fall. Luckyly I I have one mycelium for both seasons. But it grows on various trees. If it grows on yew trees, it's venomous! 2 days ago, I found my 1st hedgehog mushroom. Yummy!

Absolutely delicious looking. Sometime I whack in a bullion cube with tatties or macaroni for extra flavor. Totally frying these in oil but certainly on the menu. Thank you !!!

I would use a roasted garlic bulb and forget the granules.🇨🇦
What are your details for the oven?

I would do them at gas 200c in an electric oven or gas mark 6 ☺ pop them in for 20 minutes or so.

My new Air Fryer arrived today, and I am getting rid of my deep fryer straight away. Diagnosed with Type 2 diabetes has required a change in diet and cooking methods. Do you know what is the best Air Fryer Cook/Recipe Book is? I loved the meal shown here. I'm eating a lot of chicken at the moment, and I am beating the diabetes. I have been below the threshold of Type 2 for 5 months now. And green tea is the main reason for that.

If you're in the States, try Caulipower chicken nuggets. Breading is cauliflower. Regular or spicy. They're not bad. And their pizza is actually good and doesn't taste like cauliflower

@@LindaC616 I am a very lucky person. I have no access to Caulipower, and, anyway, I prefer Broccoli to Cauliflower. Beetroots will cook very well, as will Brussel Sprouts and garlic, and I love crispy Parsnips cooked with either swede or turnip. But, Beetroots crisp up really well, and get sweeter as well, but without a sugar penalty.

The mind boggles but I fear this is typical of parents up and down the country. Too busy chasing likes to learn something that would help their kids’ health rather than damaging it from onset.

One teaspoon of oil isn't going to destroy your health, lol, and I'd like to get a source on that claim that sunflower oil destroys your health when it's been used as a traditional cooking oil and salad oil for centuries in Eastern Europe and thousands of years in the americas with no ill effects as along as you aren't going overboard with it. Every source I can find says it's a very healthy cooking oil too.

I've read studies that claim it's bad for people who already have diabetes, but that's the thing, it's bad for that specific group, not the general population, and there is no scientific study that says it causes diabetes. That seems to be a misrepresentation / misunderstanding of the previous studies.

Calm down Gordon Ramsey. She's sharing ideas on what she cooks. She didn't say you or I have to cook it. Just enjoy the video for what it is, and try not to judge to harshly. I grew up eating this kind of food in the 80s. Now I'm in the Mediterranean and we make croquettes with a cooled down bechamel sauce with ham and you guessed it oil. I prefer this good old fashioned version 100% with grill steaks and gravy
