Claire Saffitz Makes Pancakes + Sourdough Starter 101 | Dessert Person
Raise your hand if you have a sourdough starter languishing in the refrigerator? If you do, fear not, even a neglected starter can be revived, just check out Claire’s tips for how to keep a starter fed and happy in your fridge so sourdough bread is always at your fingertips. Ingredients:
Sourdough Starter
1⅓ cups whole milk, at room temperature
¼ cup coarse cornmeal
1½ cups all-purpose flour
¼ cup whole wheat flour
1¼ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon Diamond Crystal kosher salt
1 cup active sourdough starter
3 tablespoons unsalted butter, melted and cooled
2 large eggs, separated, at room temperature
3 tablespoons granulated sugar

I'd take a good pancake over a good waffle, but I find it easier to come across a good waffle. On average, I'd still choose pancakes over waffles, though :)

I don't own many left-handed tools, but I do have a left-handed fish spatula!
I love the little info boxes while dividing the starter! Otherwise I’d probably gotten confused. Now I’m feeling confident in making a starter myself💪🏽

sometimes i will just fry up my sourdough discard as it is in butter and sprinkle some green onions on one side with flaky salt-so good

@@noneness Add a bit of flour and water to it before you fry! It mellows down the strong flavour!

@@noneness you could add a bit more salt or even some spice to offset the sourness along with adding a bit more flour and water too

Had a flash back to my youth - 60's/70's - when I seem to remember sour dough pancakes were everywhere. But they were little thin things. These look great and love the addition of corn meal! Plus everything you said about breakfast (eggs) and pancakes (home made; need nap) - all truth!

Just made these today and let me tell you… they are the best pancake I’ve ever had! I added 3 tbsp of brown sugar to the dry ingredients, a sprinkle of cinnamon, and some vanilla paste to the wet ingredients. The pancakes were so fluffy and perfectly sweet on their own. I thought they’d be a tiny bit sour due to the whole cup of starter but they weren’t! I think the starter just added to the airy texture.
I'd like a little video about starting your own starter if you can't get some from someone! Loved the ep, thanks Claire!

In essence, you mix flour and water and leave at room temp. You should start seeing bubbles and activity after a couple of days. Then you start feeding it daily to build the yeasts and fermentation activity. There was an excellent video by Jennifer Latham, head of bread at Tartine, posted to social media towards the start of the pandemic.
They look perfect, Claire! Breakfast, lunch, dinner, or dessert - pancakes are never a bad idea!

Omg i've never even thought about the griddling effecting the pancake. I always have hit or miss pancakes even when I follow a recipe to the nose. Def need to think about the heat and oil/butter!

I made these pancakes this morning and my mind is blown! I have NEVER had a flavor profile like this! They came together in a quick minute and cooked up in a flash. I tossed in some strawberries and freeze dried peaches to a few. The tang from the starter and sweetness of the fruit was a perfect combination.
I agree with Vinny. The pancake is what makes or breaks a diner

OMG!! My friends always found my method/preference for homemade pancakes that are ALMOST fried (ie, enough butter and with a dark/burnt crispy rim/edge) to be crazy! But I call it DRIZZLE-LET-IT-SIZZLE!!! I saw your crispy edged pancakes and I feel SEEN!!!

Just tried this recipe! It’s delicious! I’m new to sourdough starter, started mine from scratch so ours were made from fairly young starter discard. Also living in CO, so altered recipe to a little less than 1 tsp of baking powder, and closer to 1/4 tsp baking soda. Worked wonderfully! Will be making this again! Love you Claire!

Growing up in the '70s, my Mom cooked pancakes in Crisco for crispy lacy edges, and I'm probably still carrying some of that Crisco in my arteries today. Worth it, though!

Wonderful video! I love your explanations & small enhancements from the norm. For me, it’s the soaked cornmeal! I make waffles with a very similar recipe like yours. Next time, I’ll add the cornstarch. I make 8 Belgian waffles with my recipe, we eat 2, & freeze the rest. Butter and real maple syrup, jam & sour cream (or good yogurt)…Yum!
I love the shot of syrup being poured on the finished pancakes, and the sort of Norah Jones-ish music playing like you're about to have a romantic date with the pancakes. lol

I work in a health care facility, and since then I've rethunk my whole method of eating them, I prefer 1 large with lots of butter and syrup. Those looks awesome and I've always wanted to make a bread starter.

I used my starter discard with this recipe and my pancakes turned out absolutely delicious. So regretted I throw out my discard before without making anything.

I didn't expect that much from making this pancakes because I never had success in making the best tasting pancakes, its either its too sweet, too salty, not fluffy, dense, burnt, or undercooked. But from the first bite of the first pancake from this recipe, it jumped to #1 in the list of pancake recipes I made. Its so fluffy, and tasty, not too sweet, not salty, and smells heavenly like biscuits. I used Brian Lagerstrom's sourdough starter recipe.
