Now I'm a beef guy.....but I'll hit that salmon hard! Wifey loves sweet chili so I think this'll be a family winner. And yeah... hahahaha we ALWAYS grill in less time than it takes to get to temp. No big whoop. Ever done a burger over charcoal? Like it? Yeah me too. Time isn't the issue here! Thanks Chef E!

Looks great! I wish my wife would eat salmon that’s not “well done”. I’ll cut it in half and cook hers longer.
I can’t think of any reasons not to grill regardless of the brevity of cooking time. It’s about the flavour and experience, not really the convenience. One can fire up the kamado quite justifiably under any circumstance. By the way, this recipe is delicious. Made it a few weeks ago.
