    Dear Chef Deena Sir, A wonderful recipe explained nicely by the owner mam & cook. I am curious to know how the skin of the shallots is peeled on a mass scale. Doing this manually is really cumbersome. I feel sesame oil is not used as it may give a slight bitter taste. Matching the onion, tamarind & chilli powder in the correct proportion is the key to the thokku. Thanks again for the recipe Chef Sir. Regards Lakshminarasimhan

    When u squeeze the shallots outer first skin comes out. But it is not enough. They put it in water, soak for little time and squeeze again so the skin comes out clean. So they dry again in the sunlight. The water goes off. Sun-dried gives more shelf life also.

    For 30 kg of shallots two litres oil given. But for one kg of shallots, oil measurement given was one litre. What is this. Mr dheena please stick to proper measurements.we also need the oil Tobe used for one kg of onion. Pl respond dheena sir so that we can make this. 4.32 and 5.32 only for measurements

    Actually she is not revealing the truth of their secret recipe....and important to note is the ingredients for 30 kg recipe is totally wrong.....and I think ingredients for 1 kg is given is right except oil.....how it is possible 200 g each spices including salt for 30 kg shallots???..so I think we should follow 1 kg recipe buy reducing oil ...🙂🙂
