Hey at least the garlic was prepared properly, all chopped up into a fine mince, straight from the pre-made jar like all the Michelin chefs use.

Jack was known as the guy who always brought food on Sunday’s in order advertise his cooking show.after he lost the chili bowl he stopped though.till this day jack says it was a conspiracy hit in him by the church officials outside of it jurisdiction to sabotage his chili because of his wife’s nacho casserole.

Oh boy. So many things wrong here. I don't know if you still read these Jack since the video is going on 7 years old, but to anyone else who want's constructive criticism on what went wrong here, i'll go down the list. Brisket: Keep this out of chili. You want ground meat for the texture. You can grind up brisket but it's expensive. Italian sausage: I have no idea why he chose this. fennel is the main seasoning that sets this apart from other sausage and doesn't belong in chili. Keep sausage out period. Onion: Good, but you need to saute it to bring out more flavors. Garlic: same thing. These should be sweated out in a pan on a stove with the onions before incorporating all the ingredients (also just fresh garlic). Chipotle in adobo: Good. I use this in my chili all the time, but you need to chop it up before incorporating it. Beans: good. Pinto/black/kidney will work. However you put WAY too much in there. You want a good balance of meat and veg. You basically made a veggie chili with some meat. IPA beer: These types of beers are NOT recommended for most cooking applications. It's flavor is very strong and hoppy. Usually if you know a beer is used, lager is typically a safe option. Salsa: Don't. You're adding a pre-jarred dip. Not only that, "any salsa you want" as he says in the video are going to wildly vary in flavor profiles depending on the type you choose. Diced tomatoes: Great. Tomato paste: Not 100% sure on this one. I could take it or leave it. Seasoning: Salt and pepper to taste is good. He also said the flavor would come from the chipotle in adobo. That little can he dumped in at the end? You can't expect a little can like that to flavor the whole pot sufficiently. Lastly, chili needs cumin and chili powder. Those 2 are essential for making chili and he didn't include them.

barring discussion on dried beans vs. canned beans vs no beans, i think the secret to a winning chili is using dried whole chili peppers that you toast, reconstitute in water, and then blend into a chili paste. it works better than chili powder, and if the smoky chipotle adobo flavor is NOT what you're going for, it's the best method. also, you should have added cumin.
