传统酒酿蒸发糕 Traditional Fermented Rice Cake / Fatt Gou /Huat Kueh

据说用酒酿蒸传统发糕很小气,凡是家里有百事或参加百事做发糕的话,怎么蒸也蒸不发,是真的吗? 其实, 只要做法和食材用对方式做,就能把发糕蒸发.
以下是食谱,有兴趣的朋友们,可以做参考.
发酵食材:
100g 隔夜饭
1pcs 甜酒饼
1tsp 细砂糖
1tbsp 常温水
混合食材:
2pcs 香兰叶
100g 细砂糖
450ml 水
100g 发酵饭
300g 粘米粉
1tsp 以罗果子盐
色素
⚠️ (切記)
發糕必須發酵 52-54小時以內,靜止面糊约 8 個小時
Fermented Ingredients:
100g Overnight rice
1pcs Sweet ragi yeast
1tsp Fine sugar
1tbsp Room temperature water
Mixing Ingredients:
2pcs Pandan leafs
100g Fine sugar
450ml Water
100g Fermented rice
300g Rice flour
1tsp Eno fruits salts
Colouring
⚠️(Important)
The cake must be fermented within 52 to 54 hours and rest the batter for 8 hours
