I've been watching you on facebook for a while, and my daughter (3yo) caught a glimpse and was immediately hooked, she's now always asking to watch the chocolate thing. Her favorite part is of course at the end of the smaller thing videos when you eat it. She's alwasy asking, is he going to eat this one? and then when you do it's a literal cheer. She loves them, and i just think they're amazing to see as well!

Exactly my thoughts too. I was thinking that they should have made the dolphin do a pose like this, and lo and behold, Chef Amaury already did it before.

I think you made me realize what is my favourite type of sculpting material. 1. Can be perfectly solid when cooled off and cold shape with out needing metal skeletons 2. Can be turned liquid and also viscous enough to act like soft sculpting clay 3. Shaping solid forms out of is mad easier. Only cons I would find in this is that it's probs most brittle and also it's chocolate. Amazing work tho!

It's a really hard thing tho. If you F up on your temp curve when heating and cooling it, it can become "soft" and just not snappy or hard. With time, it will just "deflate", not really melt. Kind of like dirt that is compacting under weight? And here he paints over it, but if your aim was to keep it shiny just with the chocolate, same story, the temp curve has to be on point.

Another con is that you have to worry about the temperature a ton. Even handling it too much will melt it and then you need to start that piece again.

He won’t eat his masterpieces, he said! He stores them away at a clean place at the right temperature, they should keep approximately 15 years! He is intending to do an exhibition with all his best masterpieces!!
