I am absolutely amazed by the talent and gifting this man has with chocolate. I've never seen anything like it! Keep them coming Amaury.

You can tell how much he loves his craft just by his smile on his face and why wouldn't he when you have this talent that very few can achieve.

I took a pottery class in college and its amazing how similar the base techniques are! Like, with pottery to attach a piece you score, wet, you may put a little "mud", attach piece, and smooth transition. Every time i see him do those steps I'm reminded how he isnt just a great chocolatier but also sculptor and painter!

I love the remoras! They're weird little fish with a sucker on their heads that they use to attach themselves to sharks. It's worth noting that these fish would be upside-down when they suction to the top of the shark.

Ma lo sai che tutto il cioccolato che usa viene sprecato perchè ste robe vengono messe nel museo della sua scuola e non mangiate? Potrebbe benissimo usare altri materiali e invece spreca del cibo.. Non oso neanche immaginare quanto spende sto ricchettino francese per tutto quel cacao invece di prendersi un po' di plastilina e fare la stessa roba

Is it just me or did you hear, “We’re gonna need a bigger boat”? If there is a patron saint of chocolatiers, they are on a first name basis with Amaury.

One question: what do you do with the chocolate once you finish it? And if you sell it or something if that sort what do people do with it afterwards? Because well it’s too much chocolate to eat and I would be very sad of eating something so perfect. Just what do people do with it afterwards
