Amaury is a chocolate genius. So much fun and joy to watch him work his art!

I ran out of adjectives to describe you a long time ago...you know I LOVE it! The steam and light... The perfect touch!

So beautiful! If you put that on display in a department store, everyone would think it’s a high end toy. You’d need a sign to let them know it was actually chocolate. This train would make a tremendous centerpiece at any holiday party!

Did u see the Willie Wonka vid he made? I mentioned that he should play Wonka. With the suit he wore at the end he could.

It's hard to tell the scale of these projects from the thumbnail but they are always bigger than I think!

That steam effect with the dry ice (frozen carbon dioxide gas) is brilliant. Amaury, would be nice if you did (*another) world tour to showcase some of your skills and teach others who may never get the chance to move to Las Vegas.

That is until the dry ice started moving down. Usually the train is fast moving relative to the gases it ejects, which often appear as a horizontal cloud of smoke. In this case the train is not moving, which lets the gas settle

@@sweetpealee056 He is french, but he moved to Las Vegas in 2014 at the invitation of Jean-Philippe Maury, before co-opening the Pastry Academy (with Michel Ernots) in 2019.

As others say, that looks a lot like dry ice (solid carbon dioxide), it's a very standard way to create an innocuous and "heavy" smoke (basically fog), and would be common in catering / food environment. Falling in sheets on the sides is a pretty good tell.

I am in complete awe. The attention to every detail and addition of all the special little touches is just mind boggling. I know it is edited, but somehow I think his art goes together almost as perfectly as the video makes it seem! And he ALWAYS does it with a smile!

He should have a chocolate museum displaying his works and showcasing other budding chocolatiers or competitions. It could have a cafe where he sells his delicacies, and a shop where he sells merchandise like make your own chocolate ornament kits. Would definitely be worth a visit.
