I made this yesterday and chilled it overnight. Between my feeble attempt to convert grams into ounces and the quality of chocolate I used, I wound up with something that was far too dense to resemble anything like the custard demonstrated in this video. In fact I had to add 2/3 cup water and whisk like mad to bring it to the right consistency. The result was delicious in every sense though it did have a slightly chalky mouth feel. Wondering what the cause of this might have been.

Hmm. Mine got a little lumpy as it thickened, which it did very quickly toward the end. Maybe the heat was too high? I used an emersion blender which solved it, mostly.

It means your eggs curdled (scrambled), so maybe your heat was too high or there was not enough stirring or uneven stirring. The way you can solve this more easily if there is lumps is sifting the cream right before adding to the chocolate. It's how lemon curd is perfected in case of lumping too. Hope this helps in the future!

@@pg5128 Maybe. I've made custard many times though so I doubt it. I know how to temper the eggs and am ver careful. I'm thinking too much corn starch and/or maybe as you suggest inadequate stirring. Thanks for the tip.
