@@zynm610 makes sense. If your a cook who is using that heavy wok all day, you probably don’t want an arm work out in the middle. Tossing still seems fun. It looked better. Also, the smarter ones are kind of rocking it back and forth using hole thingy. Weight is resting on that rather than your own arm.

The strength it takes to hold a chef's wok with one hand is already great, and to toss it for hours in a restaurant? This is definitely the proper training needed. I have a wok at home and regularly cook with it, and its tiring to lug around and clean and cook everyday.

you don't need to lift it in most occassion aside from when you are taking it off the stove for platting. The key is the amount of power you put out when you pull and push with the laddle, the rest you just let the wok sit on the edge of the stove. It is tricky at first but once you get the hang of it, it's like riding bicycle. I practice with rice on my first job

If they give the students mistreated pans that have developed rust, and if the stuff inside the pans is abrasive enough, then this is a 2-in-1 operation: a school for cooks, and a wok restoration facility. Smart! I bet the lesson after this is, "How to season a new wok". And then the next day, mysteriously, the students have rusty old woks again.

This is not a postsecondary culinary academy. This is a vocational secondary school for kids who did not deem to have the grades to ever have a chance at university in China. I knew because I was in that education system and had elementary school friends who were heading to vocational schools. Yes, these are high school kids.
