Chinese Walnut Cookie Recipe (合桃酥) with Papa Fung

A light, crunchy and nutty cookie that is not overly sweet and loaded with walnuts. These super-simple cookies are the go-to cookies to snack on.

CHINESE WALNUT COOKIE RECIPE
This recipe makes 23 cookies.
[ INGREDIENTS ]
400g Pastry Flour
100g Pork Fat
100g Unsalted Butter
4g Baking Soda
4g Baking Powder
90g Sugar
A Dash of Salt
1 Egg
100g Walnut
Water (Optional: if dough is too dry)

[ DIRECTIONS ]
1. Pan-fry/roast walnuts, set aside to cool. Crush into tiny pieces, remember to leave a few whole walnuts as a topping.
2. Combine pastry flour, baking soda and baking powder, and sift. Create a well, place salt, sugar and an egg into the well and mix it together. Add pork fat and melted butter and continue mixing. Slowly push in dry ingredients into the well until, add some walnut pieces, fold and press until combined. Don’t knead because it will be dense instead of crunchy. Wrap and let it sit for 30 minutes.
3. Divide into even pieces. Roll it into a ball and flatten, then use your thumb to press an indent into the middle of your cookie. Create a yolk wash and brush it on top of the cookie, place a piece of walnut in the middle. Bake for 18 minutes at 320°F.

製成二十三塊。
[ 食材 ]
400g 低筋麵粉
100g 豬油
100g 無鹽牛油
4g 梳打粉
4g 發粉
90g 糖

1 Egg 蛋
100g 合桃
水(如粉糰太乾才加)
[ 制作 ]
1. 炒香合桃待涼後壓碎,預留少許大塊作装饰用。
2. 將乾粉料混合過篩,撥開粉料中留空,加入少許鹽,糖和蛋先和勻再加豬油和溶牛油拌匀,慢慢將粉撥入和加入碎合桃,搓勻即可,不要搓太久,以免起筋,混合即可,用保鲜膜包裹静置三十分鐘。
3. 粉糰分二份搓長條,分細粒搓圆,壓扁,中間用姆指按壓成凹位,掃蛋汁後放一粒合桃在凹位,預熱焗爐至320度焗十八分鐘,香噴噴合桃酥出爐了。

    The best recipe I found so far! Thanks to mr fung! I've tried some recipe with only butter or lard, but they won't sattisfy my taste. This recipe combine both and I fall in love in first bite! ❤️ Everyone in my family is craving for this cookie till nothing left in my cannister. P. S. Its hard to find ready to use lard here, so I rendered my own.

    Would I be able to make this a "savory" cookie by adding chopped char siu to it? I've eaten it in SF Chinatown, but don't recall what it was called.

    I’ve never had it with char siu. Do you mean preserved meat? Some have preserved meat in there that are thin slices and white in colour.

    You can use lard, you can usually find that at your grocery store. Use the same amount.

    Shortening may work. Don’t use butter, since it will make it taste weird

    I never tried that before. I think you should at least put it in the freezer instead of fridge to be safer

    Maybe shortening? It won’t be exactly the same taste, since pork fat I used was just trimmed fat from pork belly

    No, this recipe you can’t use butter, it will taste weird. Must be a type of lard or if all fails, a vegetable shortening might work

    I've personally never used a stand mixer for this recipe, so always done it by hand. Sorry, I don't know if using a stand mixer may change the texture of it.

    I tried using the mixer today. I mixed the butter and lard with sugar, salt and egg first, then add the flour mix and walnut. It's super easy and it only takes a minute or so. Just wish to share this with everyone.

    Can we use cake flour instead of pastry flour? Is this walnut cookies too sweet! Can’t eat too sweet can I cut down the sugar?

    Hello, you can, but it won’t taste the same. The butter may overtake the walnut flavour and the texture will be different

    I think Papa Fung would recommend you to use, it gives that richness like moisturizer to the cookie IMHO 😅
