Watch our exclusive show and chef John explains all the details of this dish. www.tastelife.tv/taste-china-season-1-l-huaiyang-cuisine-ep2_4467.html This is a classic Chinese Pork Belly dish, named 走油肉 (Zou You Rou), from the Jiangsu & Zhejiang provinces for celebrating Chinese New Year. Family is the basis of the Chinese culture, which is seen through the significance placed on the New Year’s Reunion dinner. This feast is extremely important to the Chinese. Food is one of the things that the Chinese take the most pride in. And of course, lot of time, care, and thought is put into the menu for the most important holiday of the year.

@@augere9620 Looks like a two day process due to the soaking over night. I don't know why people complain about that. Not all recipes have to be five minutes. Some people like cooking and I sometimes spent an entire day in the kitchen. Also no one seems to make that joke under videos about American recipes regarding smoking which also often takes hours.
This is a good dish for Christmas. If you don't forget to start cooking in September.
Kinda crazy how it starts out getting boiled to an unappetizing grey slab, that gets fried into a hard brown brick, but then the slow, long steaming with spices turns all of that into a succulent, supple, red-braised delicacy. This is one of my favorites, to eat, and to cook.

Omg nice in czech we call this piece of meat “bůček” and usually we oven bake it, but this looks amazing
There's an easier method for westerners: Step 1. Slam the pork on a grill with lots of butter Step 2. If you can't wait for it to cook for more than 5 minutes then just eat one stick of butter for every extra minute. Step 3. Pull the pork out and dip it in sum bbq sauce. Don't forget to drink the pan juices.
