    Love Chinese Rice Soup! Always order this every time I visit Chinese restaurants. I tried to make one myself but cannot get the flavor to match what I ate in the restaurant. Now I followed your recipe and steps, it worked really great!

    This is my favorite soup to order. I actually grew up with Chinese family on my moms side, I'm biracial, and my great auntie owned American Chinese buffets while I was growing up so I know it's not *real* authentic Chinese food from China...but it's still delicious. She'd actually travel to Hong Kong a couple times a year to scout potential chefs, so they could cook *real* Chinese food but you had to order off the special menu that basically wasn't offered to anyone who didn't speak Cantonese. I love Hong Kong/Cantonese food the most, it's hard to find these days since my great auntie was the one who always got it for us and she's passed, but regardless...sizzling rice soup is my hands down favorite soup.

    What do you mean by “left it outside” about the rice? Outside the fridge? Outside a container? Can you specify exactly how you left it, please? This is my favorite soup, and one of my favorite foods, and I’ve moved somewhere where none of the restaurants make it. Thanks.

    Hi, first I would like to thank you for watching my video clip. When I said left it outside means that the cooked rice is left out of the environment and let the moisture evaporate from the rice. The rice would eventually become crystal hard and thats the rice I used to make the puffy rice. If you are in a hot and humid environment do not leave the rice out for too long otherwise it will gone bad.

    Looks so good; I'm going to have to try this. I was sick with COVID in December and the only thing I wanted to eat the first week when I felt so rotten was sizzling rice soup. A friend got some for me from our favorite Chinese restaurant and was wonderful! I'm going to pick up the ingredients I need to make it myself at the store this week. Thank you for sharing your recipe and showing us how to make it.

    The restaurant I use to get this dish from; had a more thicker and whiter color. Do you know what kind of sauce it may have been? It also had baby corn and bamboo shoots. The combination was an amazing flavor. I just need the secret to making the SAUCE. :)

  • @iamkiama

    The sauce that is thick and white most likely came from corn starch. The chef probably use corn starch water to thicken the soup.

    If people are afraid to let it sit out you can dry the rice in the oven on low heat until it gets the same texture. I do mine in the convection oven at 100ºF/38ºC for 30 minutes then fry it the same way as here

    What was in the oil that you puffed the riced in? Was it ginger?

  • @iamkiama

    @iamkiama

    2 жыл бұрын

    Yes, I used ginger to test the oil temperature. If the ginger slice bubbles quickly, that means is hot enough. That's what we do traditionally. Thank you for your support, please subscribe my channel and like if you like my video

    I never had this at restaurant either. At home we scrape the burned rice at the bottom of the rice cooker and add it to soup. Or just add water
