I'm from New Orleans (who also makes gumbo), and this is one of the BEST recipes I've seen so far, i think NEXT time I'll make a pot, I'll use some of YOUR techniques.........WELL DONE!

You could have put to much file. Gumbo is file base or okra base. It's not Gumbo with out it.
I don't know what was more impressive, the gumbo or that gorgeous stove.

Gumbo file is really "ground sassafras" and it gives Gumbo a fantastic depth of flavor, add it to taste and there is a such thing as "too much". My shrimp shells were removed and deveined. I used smoke sausage and andouille sausage. The recipe link is in the description box for reference. Thanks so much :)
I made this for the first time today, and my oil was too hot and burnt my rue. I heard your voice telling me to start over lol

I'm so glad I was able to help LaCrayshal :) Don't those family secrets drive you nuts...either share it or shut up LOL (that's how we talk to each other in my family). I kept it simple now you can expand it if you want to.
I tried to make gumbo once and I failed my family and I went to Jackson Florida I had the best gumbo so I came back home found your recipe and tried again-it was a great success you made me a superstar with this recipe thank you so much
I just made this and it was so good I ate myself into a GUMBO coma!!! I cooked the 7-Up pound cake but I'm too full to cut it right now!!! Thank you!!!

when I went to visit my daughter out-of-state she asked if we can make some gumbo like Nana used to...! I had seen my mom make her gumbo for years but didn't exactly know the recipe. mom's been gone for many years but my daughter remembers her gumbo. .... So of course, I started checking out KZread and came across yours. it was the closest to her recipe.( with the exception of some Louisiana oysters. ) thank you so so much for this recipe . it was a great bonding time for my daughter and I and it really made me miss my mom.

@kenyaette OMG YES! You got the point. That's what I've been saying all along. Gumbo can be made thousands of different ways. It just depends on where you're from and you're own taste. There's no one way to make a dish. There are so many variations and there's plenty of room for all of them :)

CookingWithCarolyn Very true. It took me a few times and pointers before I learned. Now people call on me to make it for their special occasions. I love your video as I'm always looking for new ideas. Do you use the bay leaves in place of say a crab boil bag?

+CookingWithCarolyn Hi I attempted your recipe today. It was my first Gumbo. To me the liquid was gravyesque in consistency, was that the goal? I know my aunts is more, for lack of a better word, gunky. I guess I would describe gunky as more fluid but not watery? In your recipe, because I saw where it said you used file but I couldn't find the link to see how much to use so based on that recipe how much file do you use.....Thanks Bunches

+TheDurhamBull I'm not from the South side of the country but I am from the South side of L.A....I was raised in SOUTH CENTRAL L.A. to be exact. Not every cute Black woman that can cook is from the South (even though that's what most people think) LOL!! But it's cool, I'm glad you watched and cooked with me for a few minutes :D

I made this gumbo over the weekend and it was awesome. I added some okra and everyone loved it! I followed the recipe and I made my roux a little darker which I had to stir for almost 45 minutes. It was so worth!! Thank you so much for sharing!!
It's 3 am and I'm over here crying because I've been craving gumbo for ever and I would kill to have some of yours. I would make it myself but I can't cook, I'm not allowed near the stove after I set some toast on fire T^T

File Powder is ground sassafras and it adds a great layer of flavor to the gumbo that 99% of the people that make it can't live without. Depending on where you're from in the U.S. it can be added to the pot or it can be added to each individuals bowl.

Making a roux is just like making pan gravy (for those who use flour) you just cook the flour longer until it gets very, very dark. I like my roux almost black!

Agreed! And word to the wise? As you make your roux, be sure to continuously stir and keep the flame rather low.

I started cooking my roux in the over while I'm doing all the other prep. work, you get it started on the stove top and add it uncovered to a 300deg. oven and stir it every 30 min. or so, and you don't run the risk of burning it, plus you don't have to stand over it for 30-45 min. Also, like Carolyn I pre-cook my chicken on my electric smoker for about 20 min. to infuse the chicken with that Jack Daniel's oak smoke flavor I luv, lol !!! P.S. Great video Carolyn, your very photogenic and composed in your videos, would love to see you on the food network with your own show, and yes you are cute , even if your not from Texas, lol !!!
Merry Christmas Ms Carolyn. My husband and I tried your recipe today and we are so thankful you shared this video with everyone because it turned out amazingly. It's the perfect thickness, the perfect flavor. It's just great. We've always wanted gumbo, but never had it, because we didn't have anyone to make it for us. Miss Carolyn, you are right on point with this Gumbo Recipe! Im from New Iberia, Louisiana and i cook Seafood Gumbo almost every weekend. I used to do the Roux exactly like you did yours, but i got lazy and started using the jar Roux! lol I need to get back in the game and start doing my Roux from scratch, again. I never tried it with those kinds if Crabs, we always use the Blue Crabs, but thanks for this video, i will def try it with the Crabs you used. Love your Channel! 💕

I'm from Southeast Texas, about 45 minutes from Louisiana. I like my gumbo spicy, so my dad and I like to use Party Time Zummo sausages. It taste really great!! Plus after serving it we put hot sauce, and slap ya mama seasoning for those who like it really spicy. I wonder if I'm the only one who likes these particular items?? lol

Carolyn I so agree... I think every family has their own way they mix it..., lol. I was taught to boil my chicken for the broth.... We also make the roux in cast iron and add it to the broth.... Thank for sharing!!;;

I'm wrapping up my gumbo right now and I can tell it's going to be amazing! Thank you for this easy to follow recipe. I tasted it about five minutes after adding the chicken stock and I was worried that it tasted so bland. After adding the seafood and letting it simmer I was amazed at how the flavors began to come together. It seems like the longer it simmers the richer the flavor gets.

So tonight 6/28/15 I made gumbo for the first time with my GF and I came out GREAT!!! My set back was the roux was caramel light and not dark, so next time ill cook the roux a little longer, but the gumbo file did make it a little dark. Thank you Carolyn!!! Thumbs up :)

Carolyn I cooked gumbo yesterday using your step-by-step video. I am extremely pleased with the end results. I've had some very good gumbo, but this batch of gumbo put the others to shame. My husband loved it! Thanks to you I now feel like I can make the PERFECT pot of gumbo whenever I please. Happy New Years to you and yours.
Thank you Carolyn I made my first pot of gumbo and it was delicious. I followed your step by step instructions I even went out and bought a wooden spoon cause I didn't want anything to go wrong. My gumbo turned out GREAT! 👍 THANKS AGAIN!
I tried to make gumbo again for like the fifth time, and it finally came out delicious. I used Showboat beef hot links because they're my favorite, and I couldn't find any chicken andouille sausages. But this time, I cut them into slices and boiled them (TWICE) to get rid of the excess grease. I also put tilapia cutlets in the gumbo to substitute for crab. Thanks for this recipe!

+CookingWithCarolyn why not cook the sausage prior to adding to the roux? I would think there is less or no grease from the sausage.

+LADYDAEE You can, but my sausage were chicken aundouille which is way less fat than the pork version plus I used skinless breast so my "grease" factor was way lower. You have full control of what goes in

Girl you are my youtube boo. This stuff was on point. I just made some this morning and it was delish. Even my picky/grumpy aunt liked it, and that's saying something (lol!).
