Chicken Rendang | Rendang Ayam [Nyonya Cooking]

Rich and flavourful Chicken Rendang (no crispy Chicken Rendang) that will get you hooked. Substitute with beef or mutton according to your preference.
www.nyonyacooking.com/recipes...
It is during Chinese New Year that my parents will host an “open house”. For those who are unfamiliar with the term, it literally means that the house is open for visitors to come by and savour the delicacies served. My mom would prepare a variety of dishes where chicken rendang is one of them. It is a simple version which was shared with her by a Malay neighbour of ours. Since then, this dish would be prepared on special occasions.
To many, cooking rendang seems complicated. Do not be intimidated for this is a simple version for you to attempt. Trust me, this is delicious! If you have access to freshly grated coconut, that would be superb. I have to settle for desiccated coconut instead. Thankfully, it worked perfectly fine too.
If you want the rendang with more gravy, add in some water or more coconut milk. Allow it to simmer until desired consistency. Serve this with Nasi Lemak, the popular Malaysian dish, or with white rice and noodles. You will love it!

thanks for the recipe. I always explained it to my friends as "cook it until its ugly". so cool to know that there is an actual term for this. "pecah minyak", totally makes sense that Malaysian's have a word for when the chili paste goes aromatic

i followed this only 2 hours ago, just incredible flavors, only it should be made clear that the blended part when added to the pan to cook.. takes a long time to become darker, dark enough for the rich flavors to come out. i think i had mine going for around 45 minutes, adding water and stirring, then adding the chicken. after that, for another 15 minutes or so.

hi, i was wondering if what you had used was a "dry mill" to blend the ingredients? i also usually only cook for 2, and i find trouble trying to blend ginger/garlic/chili paste with the blender (too little ingredients in too big a jar for the blades to reach the ingredients). if i can substitute that with the dry mill, which i thought was meant to grind spices, it would be perfect!

Why is it that every time there is a rendang recipe in youtube, there's always butt hurt Indonesians claiming that rendang is theirs. Rendang is originated from the people of Minang that are scattered around modern day Sumatra and Malay Peninsula. LOOOOONG before Indonesia ever existed. If you say that it's indonesian because of the Minang people, then there are also Minang people in Malaysia. The Minang people existed before there is ever an Indonesia or Malaysia. In other words it is authentic in both countries. Same goes with Javanese culture coz Malaysia also has Javanese community long before there is Indonesia. We also have Thai community and culture but you don't see Thai people go butt hurt about it.

Looks heavenly! I hv two questions: 1) I noticed u had a dry version. Can I find out how can I make a wet gravy version? Is it add more coconut milk or water or both? 2) U added coconut milk. Can it keep overnite or for a couple of days? thanks

Well there is another way to make kerisik. If you can find Renuka Creamed Coconut in asian stores it would be great. It is a solid block of coconut cream. You can either cook to caramelize it or nuke it in the microwave.

Hello all the way to Czech! Desiccated coconut never fail to make wonderful kerisik. You should be able to find it at the baking section of your local supermarket, just like I did :)

Hello! I LOVE your channel! I love Malaysian food and I am so glad I found a channel that is authentic and can help me learn to make amazing Malaysian food. Could you please make a video on Laksa? I love the coconut Laksa at a restaurant near me but have no idea how to make it. I would love to learn. Also could you please post a video on how to make roti telur with curry dip and Malaysian curry beef tripe soup? I love, love tripe and am always looking for new ways to have it and I had it for the first time a couple of months ago and am addicted to it! Thank you!!

Hi Grace ! : ) I just tried cooking this n its absolutely deee... licious : P But i could not find the Kaffir leaves n the galangal or blue ginger was even harder then sugarcane stems ! I had to use a chopper to split it then pound it in a granite mortar before blending it else i don't think the blender blades can cut it ! Phew ! Had to work hard for this dish ! Now i need a Red Bull drink! haha.. Was it because my galangal was too old cause yours seem not too hard...? And if i use this recipe for beef or mutton will it work out well too ? Anything extra to take note of for this ? Thank You...

Wheee!!~~ So happy that it turned out deee..licious for you. The kaffir leaves would have added more fragrance but it's ok if you didn't find anything. As for galangal, it is tougher than normal ginger but shouldnt be THAT bad. Haha...If the galangal is old, it should be softer and not harder. Was it frozen?

  • @valontony

Oh no the galangal was not frozen ! But maybe it got so scared of being eaten it froze up?!!! ha ha :P , So this recipe will work well for beef or mutton?
