Chicken Katsu Curry Burger

Chicken katsu curry is one of my most favourite things to eat in recent Years. I thought katsu was a type of curry, but apparently the ‘katsu’ element to the dish simply means a cutlet of meat that is breaded and fried, like the crispy chicken and the sauce is a Japanese curry sauce that drenches it. Combine this with a seeded brioche bun and a zingy rainbow coleslaw and you’ve got yourself a super awesome burger, which can be air fried or baked in the oven for a healthier twist, but whatever you choose, you’ll love this! It also turns out Burger King have just introduced a chicken katsu curry burger, this is a bit different to this version, but you could probably adapt it to clone it fairly simply!

Ingredients list:
For the chicken
2 chicken breasts
500ml buttermilk
Approx 1L Vegetable oil for frying
For the chicken breadcrumb
1 egg, beaten
80g panko breadcrumbs
80g plain flour
Rainbow coleslaw
100g mayonnaise
50g low fat plain yoghurt
½ small red cabbage, grated
½ small white cabbage, grated
½ red pepper, cut into thin strips
½ yellow pepper, cut into thin strips
1 large carrot, julienned into thin strips (or grated)
1 orange, juice only
Handful fresh coriander, chopped
Katsu burger sauce
60ml tomato ketchup
3tbsp mayo
1tbsp curry powder (medium is ideal, but mild is ok)
2tsp soy sauce
1tsp sesame oil
3tsp honey
1 lime, use ½ the juice only, use other ½ for serving
1tsp yellow mustard
To Serve
2 x Brioche buns, sesame seeded optional
More chopped coriander
Additional lime juice (use the other half of the lime from sauce)

    Hey Barry! I learned a trick here in Japan to help the batter stick. You can lightly score the chicken with a knife in a crisscross pattern, then toss it in flour, egg, panko, egg again, panko again. I can guarantee you will have some super crispy katsu! Love this recipe! Gonna try it later!

    I’ve been appreciating the “hope YOU are well” lately. During my cancer treatment I actual looked forward to it (even though it was during the Christmas break) and these videos have helped my cancer brain understand things and work a bit more normally. (I’m currently trying to figure out if I still have cancer, which is scary but I’m okay) Hope YOU are well 💖

    From one person beating cancer to another, you got this! I'm also in the period of waiting to see if my radiation got rid of everything or not, but I need to wait until november (a year after my radiation) to have all the scans done to see if mine has gone fully. You've gotten this far already, you're doing great ^^

    For anyone curious, katsu doesn't just "mean" cutlet as a standalone word, it comes from "katsuretsu," which is the (1800's/early 1900's) pronunciation of the English word "cutlets."

    I'm surprised you didn't remake the Wagamama's Katsu curry sauce for this that you did before. I made that one and it was amazing. Looking forward to trying this one for sure

    Next time Mr. Barry, rinse the red cabbage after shredding it so your slaw doesn't get coloured by it. If you rinse it then your slaw would look more of a rainbow.

    I'd have sliced the cabbages on the straight edge side (quarter length-wise first), instead of using the grater. Makes for nice long strips that match the carrots.

    Here in Hawaii a favorite comfort food of mine for a cold rainy day is Chicken Katsu Curry Udon. It's a curry broth with udon noodles topped with a sliced crispy chicken katsu cutlet... it's easily available at any of your Saimin/Ramen Takeout places...

    When my daughter is back from uni she likes me to do chicken schnitzel burgers which are great! In fact they are so cost efficient because one flattened chicken breast feeds both of us. Homemade sweet potato wedges or fries lovely. I’m gonna make that sauce though when she finishes uni in 2 months time cheers 🍻

    Chicken in breadcrumbs us one of my fave meals. In Winter , with Risotto Milanaise & garlic butter. In Summer, with salad & garlic butter. Gonna have to try the curry sayce & lime instead if lemon. Damn I'm hungry now 🤣🤣🤣

    Fridges work by pumping refrigerant through an expansion valve, as the liquid refrigerant expands into a gas it cools down dramatically (think spraying deodorant), this is pumped around the cold side until it condenses in the radiator on the rear of the fridge

    I've had a look for some Thatchers Orange cider but could only get my hands on Rekorderlig Blood Orange, same idea as the Thatchers but its a pear cider with Orange flavouring and it is very nice

    No you're correct Katsu is just the cutlet and not the actual curry sauce that goes with it, its just dumbed down supermarket marketing that makes people think its the sauce. Kinda how over the past few years a Chicken Cordon Bleu is now just called a Cheese and Ham Kiev in most shops.

    Since the ultimate root of cidre is the Ancient Greek σίκερα (síkera) which just means liquor or strong drink you could technically make cidre out of anything that ferments (so not beer), although in modern parlance cidre specifically applies to apples.

    A cutlet isn't something fried in bread crumbs, it's actually the piece of meat (which must not have bones). It can be breaded or unbreaded, cooked or uncooked, it's still a cutlet.

    I've never had Katsu curry anything before, keep thinking of trying it, but never get round to it... :\ Another fun fact about fridges though; There are fridges that use flames to cool themselves too, as used in caravans, motorhomes, boats and off-grid homes... :P

    Katsu カツ is short for katsuretto カツレット, which is the Japanese pronunciation of cutlet. An English word turned in Japanese turned back into English, like "anime". Funny how we play linguistic ping-pong! Source: I live in Japan. Does that make me credible?

    If you don't have buttermilk, but have yoghurt, that works for tenderizing as well. Since you did make yoghurt at home, that is also a great option. But make sure it's plain, unsweetened yoghurt. It's used constantly in Asian cuisine.

    KFC don't actually soak or dip the chicken in milk or buttermilk. The chicken is dipped in water then tossed in the flour with the spice blend, salt and powered dairy product mixed together.

    I've always been put off trying Katsu curry cos I don't do spice, Tika masala the best I can do, this doesn't look spicy at all, now I've seen how I its made.

    As a spice lover I can confirm all the variations of "Katsu curry" I have had I would rate at about a good tasty Korma or Passanda heat wise, so not even as hot as a Tikka Masala, tasty not hot so go for it your taste buds will thank you.
