Chicken Brine Recipe | Brine for Chicken | Part 1 - This Chicken Brine Recipe is made with Lemons but you can use Oranges, Honey, fresh Herbs and Spices, and this technique produces a juicy tender chicken every time! A foolproof way for succulent and flavorful roasted, smoked or fried chicken. Part 2 will be the showing of the rub and roasting in the oven. The secret is out so enjoy!

Chicken Brine Ingredients
8 cups water
1/2 cup kosher salt do not use table salt
1/4 cup honey
3 dried bay leaves
5 cloves of garlic smashed and peeled
1 tablespoon whole black peppercorns
3 sprigs fresh rosemary
3 sprigs fresh parsley
3 sprigs fresh thyme
2 lemons sliced
4 lb whole chicken

    AB, I used this brine along with the part 2 roast video exactly like you showed it, with a 3.5lb pork butt for Christmas dinner with the family. I brought that, a pan of mac and cheese, and I made some flour gravy with the drippings! This was a big hit dish! Thanks for sharing.

    Thanks AB, I’ve always heard of people talking about brining and recipes there of but your the first that I’ve heard mention to bring it to a boil first then let it cool. Your explanation makes sense...boiling the ingredients def infuses/ marries all the flavors together as appose to just a cold brine if that makes any sense. Thanks again

    WOW, Man, I'm terrible with whole Chickens, I always end up uneven or dry and I need to drown it with gravy to cover my shame... NO MORE! I did your brine before smoking it on the grill and it was PHENOMENAL! the entire chicken was moist and tender with amazing deep flavor and the next day the smokey flavor even made it better for an amazing chicken salad! AB you saved a soul today.

    Been brining my fowl for years but I used equal parts salt n sugar. I’ll have to try it with honey now. I’ll also have to try the thyme n rosemary, I do garlic n onion powder with chicken bullion. Looking forward to part 2...

    Thanks for the recipe. I ended up using this for 2 cornish hens, and substituted honey for pure cane syrup. After 2 days in fridge, I smoked the hens on a pallet grill at 275 for 45 min, then blasted them done till a 165 temp on high heat, 400 to brown and crisp about 10 min. Finished with a peach BBQ sauce. mmmmm Thanks again!!!

    I did a whole chicken, but cut in pieces already. Left it in the fridge for 2 days and cooked it on the gas grill. Came out excellent. I could taste the brine flavor in the meat, which I don't think I ever had... no matter who makes the chicken. I would give this 2 👍🏼 up. Thank u for sharing!

    AB. Thank you for all you do. The water...I do this technique when I deep fry and find it worked well here too. I put the chicken with wrapper still on in the pot. I add enough water to cover the chicken. I then remove the wrapped chicken from the pot. Due to predicted evaporation I add roughly a cup more water. Then added the seasonings following AB’s process, when I added the chicken it was covered by the seasoned water versus diluting the water by adding water to what was seasoned.

    I have to say I love your video's and have been a crowd favorite in deep frying my turkey and then I used a brine and did it in the oven like Alton Brown said and I was now a God... But to do chicken on the smoker like this???? You have helped me to keep moving forward,,, I have down beer can chicken on the Grille,,, Now I am going to do your legs brined, Two beer can chickens brines and as many quarters my smoker can hold.....     Never brined a chicken before. Today will be my first time and I’m using this recipe. Simmering the ingredients now. Then I’ll let it sit and brine for 24 hours. Looking forward to giving it a go!

    I brined chicken breasts this week. My big mistake was letting it brine 24 hours. What i learned, the longer you brine, the saltier the meat. Should have only done it 4-8 hours. Then baked the chicken breasts.Still trying to figure out how to use up the oversalted chicken breasts! Cost of meat these days, just can't throw it away. Guess will try small recipes to use up all the breasts without adding more salt to the recipe. Some kind of recipe that uses large amount of broth, like soup, to help disperse the salt out of the chicken!

    The master chef back in his lab creating goodness for the holidays. Nice brine mixture, AB spray your cup or measuring cups with nonstick spray when using anything sticky like honey so it will all flow out of the cups with ease. I do a light brine when I cook chicken.
