How to Make Roast Chicken in the Oven | Brined Chicken | Part 2 - This is a How to Make Roast Chicken in the Oven video that is coated in a Garlic and Herb Butter (compound Butter), then cooked to a golden brown perfection master piece!
Dinner Ideas
Roasted Chicken Recipe
5 lb Whole chicken
2 Sprigs fresh rosemary
2 Sprigs fresh thyme
1 Onion peeled and quartered
1 Lemon quartered
6 tbsp butter softened
2 tsp minced garlic
2 tsp fresh thyme leaves minced
2 tsp fresh rosemary leaves minced
1 tbsp fresh parsley leaves minced
Salt and Pepper to taste
Preheat the oven to 400 degrees F.
Place the chicken in a roasting pan or a Cast Iron Skillet. Cook for approximately 1 hour and 20 minutes or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F.

Brining is the only way to go with a whole chicken. Put it on the smoker then serve and watch the look of amazement on your guests faces. Love the video!!!

Wow, did this for the wife. She is from an Italian family with recipes that are believed to be gold. I made this tonight and she is sold and I loved it. Damn amazing!!
Fabulous video as always AB! Now you are stepping into my wheelhouse my man, I do a mean roast chicken every single Sunday as its a bit of a tradition over here in the UK! Pro roast chicken tip 1: Add a couple of crushed cloves of garlic to the onion and lemon and herbs you stuff the bird with. Pro roast chicken tip 2: Keep a small portion of the lemon back and squeeze it over the bird three quarters of the way through cooking. Pro roast chicken tip 3: Carefully take your butter and herb mix and gently insert it under the skin on the breast. Pro roast chicken tip 4, if you don't have time to do the full brine, you can do a so called "dry brine" Dry brine recipe: 2 tsp garlic granules 2 tbsp fine sea salt 1 tbsp brown sugar 1 tsp paprika (mixed results with smoked so be careful) 1 tsp thyme. Mix the seasonings up, and coat a well dried bird with it. There are two options, leave it unrefrigerated and uncovered for an absolute maximum of 2 hours (I generally stick mine in the microwave to stop any flying things having a look). You can also cover it and leave it in the refrigerator overnight. Then stuff as per your recipe, crack some black pepper over it and stick it in the oven. Its optional to spray some olive oil onto the bird. This does require careful monitoring otherwise the sugar in the mix will over caramelise and it will look like its just been through reentry from orbit ;-) Suitable for 4-7 lb birds, scale up for Turkey. I cannot take credit for the recipe, I got it off another 'tuber whose name escapes me, but he was wearing an apron that looked like WW2 ship camo! Mannnn I saw this recipe ( part 1 &2) a month ago and I knew I had to try it for Christmas. Ive always been intimated to make a whole chicken but I followed this recipe and it was a lot easier than I thought and the chicken was a 10/10!! So flavorful and juicy! I put the chicken breast side down in the brine and the only changes are that I also used oregano and all fresh herbs for the butter, put the butter under and above the skin and sprinkled just a tiny bit of salt, pepper and paprika on the skin. The chicken was perfect!! This will be my go to recipe from now on. Thank you!!

AB I found your channel about two months ago. Im always looking for great cooks and new ideas. The brine Lemon Chicken outstanding to say the least!!! I was looking for a different protein instead of the traditional turkey, ham and prime rib for Christmas Dinner. I brined two chickens for the holiday and OMG! Everybody ate the chicken and not the other meats. From now on im making this chicken recipe every time I decide to bake chicken. Was a little reluctant in the past about brining just because I wasn't familiar with it. You made bake chicken THE MEAT!! Greetings from the BayArea!!

*Hey AB♥Next time loosen the skin covering the breasts and stuff that fabulous seasoned butter over the flesh. Spread the butter through the skin...I hope I'm explaining this correctly. You can use the same butter on the outside.This keeps the breasts from drying out and of course it flavors the meat as well. Someone beat me to telling you about turning the chicken upside down when brining...head nod at them. Good idea adding the potatoes and carrots too!*

Yes ... that is indeed a pro-tip. Just be VERY careful to not poke through the skin as you are trying to separate the skin from the meat.

My Mane! I got up this morning at 6:00 am to make my brine and let it cool 2.5 hours before putting my chicken leg quarters in it. Just watched this video for tips on seasoning the chicken. I’m from the country, the Deep South so down here we call a chicken the ‘barnyard pimp’ because of the way the rooster struts around! Anyway my Mane, thanks for the tips! AB! New to the channel.... I followed this recipe as well as the brine chart you recommended for my Turkey for the Christmas holiday and it was delicious!!!! I did season the turkey with Tony’s and a little lemon pepper before putting the turkey in the brine and it was PERFECT! Used the leftover carcass to make a broth for a soup and that was even better!!! Thanks OG! Happy New Year my brother. Keep the recipes coming!
