I love how Ben and James are like "screw your curveball, we're professionals. We never sabotage another chef." Good lads 👍
@jeffwells641
5 жыл бұрын
There's a neat sort of game theory element to it. I'm sure part of the reason James didn't sabotage Ben is because he knew Ben would have the same opportunity later - potentially at a more critical time in the process. Likewise, Ben knows they'll be doing more of these and it's easy enough to return the favor. I imagine if there were three chefs, and the possibility of piling on two on one you'd get actual sabotage going on there. This would also definitely happen if it were one chef vs two normies.

When I make Pani Puri ( in India) I use a dehydrated pastry/ pasta that comes in packets in supermarkets. You just have to fry it in hot oil and they puff up. If you want to save more time you even get packs of the fried and puffed puris/ pastry you just have to open the pack use them. But I do worry about the oil used to fry the ready Puri's.
I am from India and I'm just loving it seeing you guys recreate iconic Indian recipes and pani Puri is like the most famous street food ever so good choice Ben but the mango chutney is like motherly nostalgia so good choice to James but choosing winner is tough

Love and respect from India. You can never go 'wrong' with an Indian dish because there is no unanimous nationwide consensus on how something is made. I would never have made any of these dishes in exactly the same way as either Ben or James but a million other people could have. The traditions of the same dish vary from place to place. For example: for Pani Puri traditionally in my home state the water is super spicy and you would put in chaat masala and no tamarind. Tamarind is occasionally served as a side sauce of tamarind and jaggery. But Ben's riff is perfectly legitimate as well. Keep it up. Great stuff.
I feel my food horizons are expanding with Ben's recipes, over and over again it is something I didn't know exists or one can cook. Even I chicken about trying most of them I became more adventures in my day to day cooking. Thanks)

Jamie and Barry going nuts over the potato skins is ME. Flavour flavour flavour!
An an Indian, I'm proud of my bois. Ben shouldn't have put the flattened pani puri on top of the chana masala but it all good. Also, what James made is not necessarily naan bread, rather it is lacha paratha meaning it has many layers. My only advice to James would be to use a lil more oil when cooking the bread. The burnt aubergine is also a very popular dish and is called Baingan ka bharta(aubergine mush). James made it to perfection! Am really interested to see you guys do a lot more indian stuff. Also, the reason why Indians have a large number of vegetarians is because of religious reasons, not necessarily because they believe that it has more nutrition. Would love to tell you guys more about India. If you have any questions, please ask me!!
I've been looking forward to seeing a battle like this for so long and you boys really put out everything you had. Full kudos to you. The only comment I have on the Pani Puri dish specifically, and this is honestly more of a personal choice. We actually use a very soft channa/chickpea and add in chopped onions separately. Also, the water used in the dish is often a bit spicy rather than fruity and we add a little bit of tamarind chutney at the end depending on the persons tolerance to spice. The paratha looked delicious btw. Definitely something I'd be happy to order in a restaurant.
Calling it now, James is going to win. I mean...it’s even in his name!
Ben's dish would be perfect theatre for date night. 😏
