Awesome video!! Never knew how much I needed a grilled cheese brisket sandwich until right now. Also, is it weird how pleased I was when you cut the sandwich diagonally? It is, after all, the best method of cutting non-roll sandwiches!! And I totally agree that we need a whole series on grilled cheeses, preferably starting with either a rib or pork belly grilled cheese 😃

Congrats on all the celebratory events! This channel has made a big difference in my BBQ skill set, and I can't wait to see the new videos every week. (No pressure! Take a week off if you need the mental health break. That's super important.) Regarding small briskets: I'll always prefer to cook two smaller ones vs. one big hunk; I get more consistent results throughout the whole cut that way.
