    lalos Crepes are better in my opinion too. My mom makes them all the time, then she thought me how to do it. Not hard. But i do love me some homemade pancakes with REAL maple syrup and butter. No need to be rude. With this language, you're just indicating that us Europeans are rude people. You could have just said that you like crepes better than pancakes. :)

    Um...If I recall correctly a previous video, I think French Toast, you complained about restaurants putting powdered sugar on your french toast...why's it suddenly okay on blintzes?

    Chef John, I just made this for my mother, aunt, and grandmother. I had to substitute the blueberries for sliced peachettes and the raspberry sauce for a strawberry sauce since that's what I had at home :) they absolutely loved it! Thank you for the recipe!

    I hate low fat anything, not just due to the flavor and quality but because they're usually more unhealthy. The food companies know low fat foods kind of suck so they add different, often artificial, things to thicken them to make them creamier and they dump a ton of sugar to make them taste better. My dad is on a diet and bought some low fat yogurt and it did have a few less grams of fat but it had an extra 15 grams of sugar, bringing its sugar content pretty close to an equal amount of Coke.

    Great videos! Started making these 20 years ago when the only restaurant in town that served cheese blintzes went out of business. I cook mine first, seam down, then cool and into the frying pan. They also go well with strawberries and sour cream. I always learn something from your videos and really appreciate you sharing your knowledge.

    Damn you chef, after watching this at 9 pm I waited till 10 pm and drove to the local pastry / donut shop, that's when they start making fresh pastries for the next day and spent 37 dollars. eclairs, baklava, apple fritters,donuts I was on such a sugar rush I had to take a half a xanax just to get to sleep.

    When I was living at home, we went to a restaurant for Sunday brunch on special occasions. Cheese blintzes were my favorite there and I have been unable to find anything like them, until now, 30 plus years later. Found your recipe and made them - delicious! Thank you.     Awesome recipe! I will say though, I did not realize just how small these were? I made a batch for a family brunch tomorrow and came out with exactly 14 after increasing the crepe batter recipe by 33%. Speaking of, the crepe batter recipe is great! These are strong and flexible while still being tender and were super easy to cook!

    Because of a Jewish grandmother and several very close friends that are Jewish, Blintzes were a staple as a kid growing up, my favorite is cheese with strawberries we had on Shavuot, and I've carried the tradition in my house. They can be filled with just about anything, my latest experiment was Asparagus tips/cheese topped with an Asparagus puree served with roast beef, and served alone or as a side. My partner, Irish father and Jamaican mother, grew up in New Orleans and has thrown in a few ideas as well. Once you get the Crepe recipe down the sky's the limit!!

    Made this for Mother’s Day today as well as the quiche Lorraine…. There where 4 other desserts when the family came over later in the day, all home made…and everybody wanted the cheese blintz….THANKYOU you have made my family happy for over 15 years now!!!     Diamond Borealis No, cheesecake has flour inside of the cheese mixture for structure and granulated sugar not powdered sugar.

    No. Cheesecake uses only cream cheese. Blintzes uses mainly ricotta cheese (sometimes some cream cheese mixed in, as in the recipe shown here) and aren’t nearly as sweet as cheesecake. The sweetness mostly comes from the berry topping. You can also top it with sour cream.
