ചെമ്മീൻ അച്ചാർ വളരെ രുചികരമായി ഉണ്ടാക്കുന്ന വിധം | Homemade Prawn Pickle Recipe - Chemmeen Achar
Ingredients
Vinegar.
Prawns - 1/2 kg.
Kudampuli / Gambooge Pot tamarind.
Ginger.
Garlic.
Pepper - 2 teaspoons.
Coriander.
Turmeric powder.
Dried chilies.
Green chilies - 4 nos.
Sal to taste.
Coconut oil.
Curry leaves.
Mustard seed.
Chili powder - 3 teaspoons.
Asafoetida.
Method
1) Clean prawns and wash in kudumpoli infused water.
2) Make a fine paste of dried chilies ( 8 - 10 nos.), salt (to taste), turmeric powder, coriander (1 tablespoon), pepper (1 tablespoon), ginger ( 3 pieces), garlic( 10 cloves). Marinate the prawns with the paste.
3) 20 minutes later fry the prawns in coconut oil with curry leaves.
4) Heat oil in a pan, add mustard and splutter mustard seeds. Add chopped ginger ( big piece), garlic (8 cloves), green chilies ( 4 nos), and curry leaves. Once the raw smell subsides add 3 tablespoons of chili powder and saute. Saute in the fried prawns, 4 tablespoons of vinegar, and 1 teaspoon of asafoetida. Remove it from flame.
Tasty prawns is pickle ready…

മഞ്ഞൾപ്പൊടി -അര ടീസ്പൂൺ
ചുവന്ന മുളക്
പച്ചമുളക് -4 എണ്ണo
ഉപ്പ്
വെളിച്ചെണ്ണ
കറിവേപ്പില
കടുക്
മുളകുപൊടി- 3 ടീസ്പൂൺ
കായം
വിനാഗിരി
തയ്യാറാക്കുന്ന വിധം
1) ചെമ്മീൻ കഴുകി വൃത്തിയാക്കുക. കുടംപുളിയുടെ വെള്ളം ഉപയോഗിച്ചും കഴുകുക
2) വറ്റൽ മുളക് ( എട്ടോ പത്തോ) ഉപ്പ് ( ആവശ്യത്തിന്), മഞ്ഞപ്പൊടി, മല്ലി (ഒരു ടേബിൾ സ്പൂൺ), കുരുമുളക് (ഒരു ടേബിൾസ്പൂൺ), ഇഞ്ചി (വലിയ 3 കഷണം), വെളുത്തുള്ളി (പത്ത് കഷണം),എന്നിവ നന്നായി അരച്ചെടുത്ത് ചെമ്മീനിൽ പുരട്ടി മാറ്റി വയ്ക്കുക
3) 20 മിനിറ്റിനു ശേഷം വെളിച്ചെണ്ണയിൽ കറിവേപ്പില ചേർത്ത് ചെമ്മീൻ വറുക്കുക
4) ചൂടായ ചട്ടിയിലേക്ക് എണ്ണ ഒഴിച്ച് കടുക് പൊട്ടിക്കുക. ഇഞ്ചി (വലിയ കഷണം), വെളുത്തുള്ളി (8 എണ്ണം) പച്ചമുളക് (നാലെണ്ണം), ആവശ്യത്തിന് കറിവേപ്പില എന്നിവ ഇടുക.
മുളകുപൊടി (മൂന്ന് ടേബിൾ സ്പൂൺ), ചേർത്ത് മൂപ്പിക്കുക. കൊഞ്ച് ഇടുക, വിനാഗിരി (നാല് ടേബിൾസ്പൂൺ) ചേർക്കുക, കായപ്പൊടി (ഒന്നര ടീസ്പൂൺ) എന്നിവ ചേർത്ത് ചട്ടി ഇറക്കിവെക്കുക
