    It’s popular in the southeast U.S., particularly in South Carolina, I think. Pretty seasonal, from February to May, as they begin to spawn in the springtime. Sometimes online purveyors will have shad roe frozen, but expect lower quality if frozen. It’s best if you can fish for shad yourself, or get to know someone who does.
