    I like that the rub has no sugar. The use of citrus juice was good enough. Too many BBQ rubs and sauces have enough sugar to turn the meat into candy bars.

    the only one i've found so far with no sugar that isn't homemade is Stubbs BBQ rub, just their bbq tho..the rest of their rubs have sugar that i've found.. its all spices no chemicals, at least that i see in the ingredients..homemade is the best tho!!!

    Kent I used to shred pork with fork until I found the magic of a hand mixer. You can beat the pork as much as you like and it’s done fast. Same trick works well for chicken also. Good to see another four legged friend has joined the family.

    Shan and Kent, it's been a while since I've seen one of your videos and I was watching one of your old camp videos. It reminded me what it was like to go home to the farm at my Aunt and Uncles. I had that same pit in my stomach like I've been gone to long and my eyes weld up. It hit me guys..its not what you do but the light in your heart of being free and helping people. I'd give anything to go back and give Aunt Ruth just one more hug. The cooking is awesome guys don't take me wrong but I've learned that in this community there are more howdys, more hugs, more sweat on the brow, more blisters on the hands. I miss that so much..so my point is thank you..thank you for reminding me what it's all about. I mean when I say this this, please don't take me wrong..love y'all and GOD BLESS.

    Carnitas...so many variations of this recipe but I’m a personal fan of getting them crisped up at the end too and was giddy when Mr Rollins broke out the cast iron skillet. There’s nothing like a serving of moist tender but crisp carnitas.

That Boston Butt is one of my faves on the smoker Kent... you can do so much with them and they're all kinds of that good!! Those dogs have a great life don't they? lol....     Carnitas are a staple in the Mexican and Mexican American communities.... good job Mr. Kent. One of my all time favorites. Your carnitas can hang with the best of them and are originalbeing that the puerco was cooked over the pit. It's the great detail you give your puerco (pig)... again your style is awesome. I love the little barrel pit... I use a horizontal barrel pit, but I have seen all the good dishes you have done on your vertical pit.... putting that on my Christmas wish list.... thank you "Varquero Kent" (Cowboy Kent)...     I didn't know what carnitas were before I watched this video. I have several pork shoulders in the freezer because I will sometimes smoke one all day and make pulled pork sandwiches. After watching this, I trimmed a shoulder and put the meat in the crock pot all day. When it hit 200 degrees I shredded it, then tossed the pork shreds into the skillet with the mesquite seasoning. Tossed that crispy meat onto a tortilla with cheese, sour cream, and salsa. Holy cow was it good. Another win for Cowboy Kent.

    This is absolutely amazing. Just made it myself. Almost tastes like bacon on a tortilla with cheese and avocado. Makes an enormous difference by putting it in the skillet after smoking and pulling it. I love my Pit Barrel too !!!Simply amazing!!

    Carnitas is one of my favorites. In my region, if you go to any mom and pop Mexican restaurant, even IF carnitas is not on the menu, they still can make it in a jif.

    I think there's a fair amount of variety in carnitas recipes. For example, just within my friend group there's the fried large chunks of pork method, smoked then fried large chunks, smoked whole butt then cut into chunks and fried, and also the method illustrated here. I suppose region makes a huge difference. My family is originally from El Salvador, and while carnitas are not as popular there as in Mexico, I don't think any of these methods would raise anyone's eyebrows.

    (Also, the value of this particular method is that you can make Southern-style pulled pork, then have carnitas with the leftovers the next day. I do this every time pork butt goes down to $1/lb at the market!)

    I love to smoke, relaxed and my cat knows good food... she sits with me until it is done. She has to be the best quality control checker around. Fleabag has been the best 4 legged companion I have ever had. Love the use of the citrus juice as it is cooking and finishing up. Normally I just do pulled pork, but since I normally buy a 2 pack I now can do 1 of each.
