Join Carla Music in the Bon Appétit Test Kitchen as she makes pork shoulder steaks. The centerpiece of Korean barbecue is the meat, but it doesn't have to be steak. Keep an eye on the edge of the meat where it touches the grill: When it’s browned, turn the pork over.

    As a Korean person growing up eating this type of food, I think they really nailed down this recipe in terms of using traditional Korean flavors and getting it right. I also love the end part because Korean food is meant to be communal and meant to be shared and I think BA caught that vibe really well 💕

    Same here. I make this at home but my marinade uses gojujjang, garlic (a crap ton), ginger, honey, and some Sprite or 7Up and get the pork shoulder sliced thin. Placed in a creaming hot cast iron skillet.

    We have our own recipes for this cut of meat. It was reserved for poor people but influencers like this make a source of protein and fat unaffordable for poor people. This is cruelty.

    @@johnyang5305 He thinks that Korean food is somehow luxury. Pork shoulder is still pretty much the cheapest cut unless you go into offal territory. I wonder what he would say about classic French "sweetbreads" (brined thymus and pancreas).

    You know it's good when you just had this two nights ago...at home...with a load of perilla leaves and water parsley...with an aged ssamjang sauce...that your mum, the Korean Goddess of Sauce made... On a separate note, I just have to praise Carla because she always knows what's up. Sometimes people forget about the sesame oil and salt sauce when a ssam party is mentioned, but it is SO important. SO IMPORTANT. Also the part where Carla takes off the end of the stalk(?) reminds me of my mum. Get the perilla leaves, people, I promise it's worth the effort to find them.

    Also, love that BA repped perilla leaves 9:40 !! It has a very minty flavor that might be weird at first but goes absolutely amazingly with barbeque. You guys should try using perilla oil instead of sesame as well.

    HAHA! (CUE SPIRITUAL ORGAN MUSIC) That's gotta be one of the funnier parts of any BA video. I watch them at work and my co-workers all laugh and smile when I randomly bust a belly laugh in the middle of the day. Maybe put the camera/editor's name in the descriptions too. BA vid's have a culture of their own that I love.

    I am so glad Carla pronounced Gochujang and Deonjang right. Technically the sauce is called Ssamjang. You can buy it mixed already and add the other ingredients. It is especially good with pork belly wraps.

    I made this recipe the day it was posted. I’d never tried pork shoulder on the grill and now it’s my go-to. The flavor is spot on except I thought it lacked salt - there is none in the marinade. You can add it as a condiment like in the video, but if you want the meat to stand on it’s own, it needs salt. The leftover meat makes an amazing rice bowl.

    These wraps are the best thing ever!! Makes you feel full very quick too! The garlic are a must but u can literally just put any meat in there with a bit of any savory sauce, bit of rice, u can put anything that u think tastes well together put it in a romaine lettuce, wrap it and eat the whole wrap in one go! Ugh, makes me crave one now!!

    love that Korean food is getting recognized - grew up eating ssam (lettuce wraps) and hearing Carla, whom I adore, talking about gochujang, doenjang, ssamjang (the dipping sauce)... 🤯🤩🥰 just blows my mind!!!!

    My FIL is always bringing me gigantic pork butts from the base exchange and I usually just slow roast them on the grill for chopped sandwiches. The next one is getting sliced up for this recipe. I'll report back soon. I bet Maangchi would love this! ❤️💕

    You can sub in a sweet soju for the sake, easily. I've even heard of some using makgeolli in their marinade, but that's tough to find where I'm at.
