Canning Venison - Raw Pack Complete Guide!

In Lizzy's debut video we'll be canning meat using the raw pack method for pressure canning venison. If you're new to pressure canning then this video is for you. We start with a brief discussion of how to use a pressure canner safely as well as canning equipment. then we jump right in and start the meat canning process. We'll be canning venison, elk actually, but this method for canned meat will work just as well for beef, pork, lamb, or even fish. To can meat, the equipment you'll need is: a pressure canner (this won't work with a water bath canning method), self sealing jars and high quality canning lids and rings. As for ingredients, it's just meat and a little salt. The salt is optional. Canning is one of our favorite food preservation methods. There's no need for refrigeration and the and the shelf life is amazing. It's the best method for prepper food storage.

    I was taught how to can when I was 12 years old 73 now you have the best video I have seen for the beginning canner I would advise all how want to can watch this video and learn the art of canning and cooking with the pressure cooker Great video Happy Canning!!!!

    I have a wonderful All American canner that I have only used once. This video motivated me to get it out and use it more often. I live in Florida (very close to where you used to live) and grow tons of veggies in the garden. I don’t can them because it is SO hot here and don’t want to heat up the house. You made me realize I can do this outside on a camp stove. Thank you!

    No AC..?! I know that area doesn’t really need air conditioning yet i would burn slap up year round from cooking and trying to sleep. I run my AC if it’s 30 degrees outside because I can’t sleep hot. Menopause sucks lol Thank you for the tutorial because I do want to get a pressure cooker. I’m not a fan of venison or wild hog. I should be I grew up with it. The way you preserve …I think i might like it your way. I just don’t like a gamey wild taste. Girl you are Wonder Woman. You work so hard for your family and it shows. I’m single and never had kids so I’m a bit envious to have a family to love and feed. Great job. I’m your new biggest fan.💯

    Thank you so much for doing this, I've been a fan of Clay's for some years now. I was a chef in Savannah GA for 20 years and hunt and grow my own food. I'm now a letter carrier for the USPS in New Jersey and still hunt and grow. The one thing I've always regretted was never learning how my grandmother canned, preserved and seasoned all of the things from their farm. I can't wait to watch and study everything that you guys do, truly an art firm I hope never gets lost!     Top notch instruction, video quality and entertainment! Canned a ton when I was a kid, that jiggling pressure valve either brings back memories, or nightmares.     That was an excellent tutorial Ms. Clay! My Bride and I have canned meat, and everything else, since day one (46 years and counting!) we used an old National (Presto) canner until last year when I bought one of the big 941 All American canners.....they have a gauge AND a petcock (i.e. Jiggler, rattler, etc.) Watching that guage for an hour and a half is a maddening chore, I dread doing it, so the jiggler is way less of a chore to listen to!     This is great! My sister ran into the same problem with bad kids this season also. You're right about respecting pressure canners. Once at the church I grew up in, someone cooked mashed potatoes in one and it did blow up. Destroyed the vent hood and put a dent in the ceiling. Luckily nobody was in there.

    Yeah they can be dangerous. My rule is my kids can’t be in the kitchen when I’m using it.

    I have the same canner as your newer one and I found a jiggler on Amazon and it works great. The gauge is really difficult to hold true

    This is great, I follow Allison on omnivore quivers , she mentioned this site. So my next deer I want to can. Presto 16 Canner is coming this week. Pumped to try. Also found the book farm journal on eBay. I’m 57 so love the old cookbook foods. Coming next week also. Can’t wait to get trying 🤙🤙

    🤗 I’m so glad you found the book. I love that book. My husband just brought home an elk yesterday so I’m gonna be canning meat through this next week . It’s really easy to do and we love the canned meat.

    I do around 21 pints a season because it’s only feeding 2 our kids are out of the house already but I still use the granite canner boiling for 3 hours. I can remember mom using the old jars with the wax and we still have some may have to go back to that style if lids don’t come available or price comes down ✌🏻
